To think green beans are just the most revolting vegetable

They manage to be tough, stringy and weirdly spiky all the at the same time and they have the flavour of a chewed pencil. There is literally no dish I can think of that is enhanced by their presence. They’re the unpleasant bastard cousin of sugarsnap peas and mangetout.

ETA- by green beans I mean runner beans. Just in case there’s any confusion

Oh, I like them.

I think the only one I’m not keen on is courgette. The texture makes me feel a bit queasy. Celery is horrible raw but fine when it’s cooked in curry/bolognese etc.

The plant I eat most often is coriander. I know it’s a ‘marmite’ food because some people have a gene that makes coriander taste of soap but to me, it is delicious and I eat substantial quantities of it most days of the week.

Picked fresh from the garden, runner beans are okay if you don't leave them on the plant too long.
My most hated vegetable is parsnip, even the smell of it makes me gag.

My mum is from an area with a massive market gardening industry and when we visited we would get fresh-picked runners and they were LOVELY. Supermarket specimens are nothing like.

My vegetable nemesis is kale. Just nasty and scratches the back of your throat.

YANBU - they taste vaguely of olives to me? Awful things! Luckily DD is allergic to them 🤣

Also seconding other posters on celery, coriander and fennel. Courgette + butternut squash are my other pet hates. Other than that I’m a massive vegetable fan, believe it or not!

@AngeloMysterioso I hate rubber beans although I like the fine green beans- I up you and give you broad beans- taste and smell of dirty socks!!

If they are stringy and spiky they are too old. I pick mine while they are still young and edible and delicious. I don't buy supermarket runner beans.

No one has mentioned asparagus either- hate it- maybe it's just me!! Aforemenytioned okra and celery- disgusting!!

Now fennel is an interesting one- I use fennel seeds a lot ground down in a delicious beef and coconut curry from hairy bikers and it's delicious -but as a flavouring- makes the house smell amazing too when it's cooking!

YABU. Runner beans when fresh are delicious, and beautiful in colour. You may have experienced old ones past their best or badly stored.
I've tried but I cannot get on with celeriac. Or parsnips <<shudder>>, which taste sort of greasy to me. I don't dislike asparagus but I do think it's overrated.

I love kale, mushrooms, beetroot, aubergine, fennel, brassicas, peas, onions… pretty much everything people loathe on here Grin
But some are less inspiring/versatile than others, I will admit; beetroot often ends up juiced with oranges and ginger in my house because there's only so many times I want to cook with it, and fennel I like as a snack but again isn't that versatile.

On a more positive note, what vegetables do we love?

I’m a big mushroom fan and adore most green things like broccoli, spinach, sugar snap, kale etc. Especially love leeks! Can’t beat honey roasted carrots and parsnips either. Really liking the sweetcorn ‘ribs’ trend that is popping up in lots of restaurants lately

I seem to use the most hated veg here for soups; squash, beetroot, kale, asparagus, fennel and even celeriac all make great soup. I also cook with chicory as well as using it for salads as it goes really well with potato and cheese.

But yeah, parsnip I cannot abide, even in soup...

Most green things for me too. Cavolo nero is probably my favourite, and Savoy cabbage, tenderstem, spinach, broccoli, peas and green beans of all sorts, broad beans...
I adore leeks too, and peppers. Squash and pumpkins. Potatoes and sweet potatoes. Sweetcorn. Water chestnuts (do they count as veg? Lovely in stir-fries anyway). Pak choi, choi sum. Carrots raw as a snack, more so than cooked ones. Do olives count? Love them, all colours and types although I prefer simple ones, not with loads of flavours added. Aubergines are lovely to look at and handle (matron) and soak up loads of flavour. Courgettes I love; they're so versatile.

Not so big on salady things – I like cooking with tomatoes, but don't love them raw; cucumber I can snack on but I don't want to eat a huge amount. Spring onions are good for flavour cooked into things but I don't much like those raw either. Can't be arsed with salad leaves, really, but I do cook with them – I make a Nigella Lawson anchovy and chilli sauce for pasta and wilt them into it.

For celery you can remove the strings by breaking it at the top and pulling it backward.

Green beans are lovely when they're cooked right. If they're undercooked they squeak in your mouth.

Green beans = wonderful, possibly my favourite veg. I was delighted to have grown them successfully this year.

Runner beans = NOPE. Why the fuck do people grow them when green beans are a much nicer alternative??

I was never a fan of green beans until I tried them roasted. Same situation with cauliflower. Most vegetables taste delicious when they've been roasted I've discovered!

Cooked carrots are hideous. Absolutely vile.
