I’m so sick of hit and miss recipes. Can people post recipes that they have tried and tested. A couple things recently did not work and it’s put me off trying new recipes. The waste of effort and money is so disheartening. Literally for anything as long as it works. Hoping for some low risk inspiration.

For me:

Raymond Blanc’s coq au vin

Delia’s English style pancakes https://www.deliaonline.com/recipes/main-ingredient/eggs-recipes/basic-pancakes?amp

Madhur Jeffrey Rogan Josh

I can't link to it but google it- hairy bikers pan Haggerty

Cheap and very delicious stew like meal using bacon, carrots, potatoes, parsley, onion and chicken stock and a bit of grated cheddar -great in winter

We have it at least once a week in cold weather

Loads from RecipeTinEats. The ones of hers I make over and over are:

Quesadillas

Short rib in red wine (but I swap the red wine for stout)

Butter chicken - both the long version and the dump and bake version

Thai red curry (easy version with pre made paste but pepped up)

Hazelnut & olive oil cake - great for gluten & dairy free

One skillet chicken shawarma and rice

Beef & lentil soup

Honey soy chicken

Lamb shank massaman (uses jar paste, SO easy, takes 5 min to get into the oven, but delicious )

Baked mac and cheese

Greek chicken and lemon rice - amazing with home made stock (haven’t tried using cube yet)

Pulled pork/pork carnitas

The Rogan Josh recipe works because of the 10 tablespoons of oil!

I read some tips from restaurant chefs once as to the secret of a tasty dish, one said “we cook for you like we hate you”. Make sense when you know it’s the oil, salt, sugar that make the dish!

I def don’t use that much and it still works

https://thehappyfoodie.co.uk/recipes/chicken-katsu-curry/ - Really simple and easy to knock up midweek

https://www.food.com/recipe/gordon-ramsays-malaysian-chicken-curry-254495 - A really tasty curry for a Saturday night instead of a takeaway. I usually add more chilies for a bit more spice.

https://www.nigella.com/recipes/lasagne-of-love - I'm making this at weekend when we have friends over. It's a bit of a slog but absolutely delicious! Usually buy a nice garlic flatbread and a do a big bowl of salad with it.

Lasagne of Love

This is what I make for my children’s birthday celebrations, for farewell suppers to send them off before they go away, and for the dinners to welcome them back when they come home again. It’s our family take on a traditional lasagne, though I’m not su...

I won't post a million links, but everything from Delia's summer and winter collection

One tin baked beans. Two slices of bread. Heat beans for 1 minute at medium heat. Place bread in toaster set for 3.5 minutes. Leave beans heating.

Once toast has popped up, butter it well. Beans will have been heating for 4.5 minutes now and should now be gently bubbling.

Pour beans over buttered toast. Add a little black pepper to taste.

Perfect 👍

Not one recipe but a book. The Best of Sainsbury's Baking, the Chocolate Fudge Cake, Devil's Food Cake and Victoria Sponge cake (I add vanilla to the batter) are my go to's

Every recipe I've tried has worked. I'm holding on to my copy for dear life as it is no longer in print. I started baking when I was 5 or 6 with my mum, but it was the book that I actually used when I was allowed to bake on my own at 8.

Another one for the BBC banana bread!

RogueFemale · 23/07/2024 21:05

I love this recipe and it's impossible to get it wrong unless you burn it or whatever. Plus it's completely adaptable to whatever you have in the fridge in terms of curry content. You make a base with onions, tinned tomatoes and various spices, etc. then it can be adapted by adding either squash/veg, meat, prawns, tofu, whatever. (I don't bother with the lime leaves or nigella seed but do use the cardamon pods and mustard seeds).

Edited to add: the squeeze of lime at the end is superb, really makes a difference.

Anything by Felicity Cloake in her ‘how to make the perfect…’ recipes for the Guardian always works really well for me. She’s brilliant.

LaMarschallin · 23/07/2024 21:43

True - Felicity Cloake is very good.
Her moussaka recipe is the only one I use.

Mary Berry's Victoria Sponge and banana bread (with two bananas) are peerless.
Delias pancakes - totally agree.
Benjamina Ebuehi's Mango Ginger and Lime Cheesecake
Jamie's Salad dressings page from Ministry of Food are all excellent
Nigellas Chocolate Christmas Cake is superb

I bake too much.

It's an American recipe but easy to convert. I use cajun seasoning from a jar rather than chilli flakes in the mayonnaise mix, but that's personal preference as I don't like too much chilli. I also leave out the pepper and the coriander (ditto).

I second this, DP makes it and it's lush! The recipe is for 4 but the 2 of us polish it off!

It’s one reason I use the simply cook boxes ( the ones where you add your own fresh ingredients that you buy) - haven’t had one yet that I didn’t think was utterly delicious. I make them twice a week -
