What chocolate do you use for homemade cookies?

I started baking 2 years ago. And have tried many cookie recipes. I usually enjoy the cookie flavour but find the chocolate detracts from the overall flavour. My friend had one and said to should use another chocolate. I mean light bulb moment! I’m so stupid for not even questioning the chocolate I use.

What do you use? I’ve attached the bars I usually get. I swear a lot of recipes say good quality dark choc, min 70%.

I use tesco own brand milk chocolate chunks for cookies, they come in 100g packs.

Asda own brand cheap chocolate in all cookies and brownies and I get compliments on them everytime

Unless it's for something very special, I use the cheapest on the day that I shop. Plain usually gives a better flavour than milk. If I was making a ganashe then better quality. Avoid cadburys for cooking.

I personally don't like dark chocolate but when baking for others I normally use the cheapest one available and have always been complemented on my baking. I used to use Lidl a lot but we don't have one near us any more so tends to be Tesco cheapy chocolate.

Lidl/Aldi dark choc chips here. They are good I think.

I have used “better” eating chocolate but never tastes right.

Sainsbury's own brand cheapest chocolate...either dark, milk or white depending on what I want. I chop it into chunks myself. It's about 60p for 100g

Callebaut- the bigger the sack the cheaper it gets, depends how much you bake. I found a huge different in quality of my cookies.

I didn't actually bake anything last week but I made a walnut, cranberry and rice crispy melted chocolate thing and used Aldi dark cooking chocolate.

It was lovely and I'm going to make it again.

My kids don't like dark chocolate, so I usually compromise and mix dark and milk chocolate, to end up with something that's probably around 55%-60%.

If I'm melting whole chocolate, I use Lindt. If I need chocolate chips, I just get the supermarket own brand.

For melting: tesco cheapest (dark usually) bars - think Molly's is the brand.
For cookies etc where I want chunks, the drops/spots/chunks that come in packets pre shaped. Whatever brand is available - there usually only is one choice round me.

Also, I don't use chocolate at all for a standard chocolate cookie or cake, just cocoa. Chocolate is only for decorating, chocolate chips, or recipes that specifically call for it (e.g. Sachertorte). Cocoa actually gives a much better chocolate flavour, often, than melted chocolate.

Agree with @Fink, for chocolate cake, chocolate brownies etc, I would always use cocoa.

I use Lindt a lot, or Sainsbury's own brand chocolate bars or chocolate drops. My kids prefer milk chocolate, I prefer dark. Your friend sounds rude like she prefers milk chocolate but you use what you like, there's no right or wrong option, it purely depends on your own taste (unless you like Scotbloc, that stuff is foul).

Melted chocolate is essential for good brownies IMO. All the ones I've made with just cocoa are cakey rather than fudgey.

I really like these they are fat and supposedly a replica of a famous NYC cookie.

Great with hazelnuts. They are fat like Tom’s cookies (are they still around?).

Refrigerating dough is key for them to hold their shape.

Any chocolate that is couverture - was advised by a baker friend and haven’t looked back. It’s chocolate that contains at least 32% cocoa butter.

For brands I like Callebaut and Valrhon.
