What chocolate do you use for homemade cookies?

I started baking 2 years ago. And have tried many cookie recipes. I usually enjoy the cookie flavour but find the chocolate detracts from the overall flavour. My friend had one and said to should use another chocolate. I mean light bulb moment! I’m so stupid for not even questioning the chocolate I use.

What do you use? I’ve attached the bars I usually get. I swear a lot of recipes say good quality dark choc, min 70%.

Link above and reason is I am doing Keto at the moment so use coconut flour and sugar replacements

Just the cheap Tesco cooking chocolate (in bars, I chop it up). That chocolate is fancy chocolate for eating, not cooking.

I really like these they are fat and supposedly a replica of a famous NYC cookie.

Great with hazelnuts. They are fat like Tom’s cookies (are they still around?).

Refrigerating dough is key for them to hold their shape.

Milk chocolate for chips for cookies. I also usually do my dark chocolate cooking with the 55% ish instead of 70% stuff.

Callebaut chocolate chips. I buy them in 1kg bags. It's the best quality chocolate I have found for baking and used by choclatiers too.

Like many others I use the cheapest dark chocolate (its 50% cocoa) from whatever supermarket. I haven't bought any for a while and usually keep a stock in from Aldi where it's about 30 p a bar (probably more now). Chopping it up for cookies is a bit of a pain but it's worth it for the saving vs chocolate chips.

I also get loads of complements and one of my colleagues who likes to think she's a cut above the rest of us once said how nice some brownies I made were and she said I must have used really good ingredients. I took great pleasure in telling her that it was all from Aldi including the aforementioned 30 p chocolate.

Have they stopping selling cooking chocolate? My mum always bought cooking chocolate chips for cookies and muffins

Please can you share your brownie recipe. I’ve only made them once since I got into baking as they tasted like a cheap supermarket version.

Used the same choc as I use in cookies 70% either Lindt or Green and Blacks.

I don't think you can go wrong with the Kirkland ones from Costco.

As much of a mix as possible. I make big batches and freeze leftover dough to make later. I usually add:

Lidl/Aldi own brand M&Ms - peanut, crispy and chocolate
Chopped up dark, milk and white chocolate bats
Chopped up pretzel pieces
Reeces pieces
Chocolate buttons
Anything else I see.

Cooking chocolate isn’t proper chocolate, it’s chocolate flavoured coating for things like truffles and cake pops.
