To expect my eggs to behave logically

Always the same story. Hard boiled yolk at one end, snotty uncooked white with some soft boiled yolk at the other.

Can anybody tell me how to get an egg which has cooked white and soft yolk for dippy soldiers.

They are completely submerged in the boiling water so I can't begin to understand why one end cooks so differently to the other.

Slightly off topic... Have egg shells got thinner? Every time I crack an egg open I get bits of shell in the bowl/pan. I never used to, but the shells seem less robust than they used to. Is it me or the eggs?

Try different brands and shops. There's a lot of variation. Cheap eggs seem to be in a tracing paper shell these days.

It's probably you... do you find yourself turning green and yelling things like "you wouldn't like me when I'm angry" at the eggs before you crush them?

Put in cold water, bring to a rolling boil, then Cook for 2mins 45 secs. Perfect every time. Only problem is if you have 2, thé second one thé yolk's getting a bit solid.by the time it's eaten.

Shake them gently before boiling them. Apparently this centres the yoke.

That's eggsactly what I do. 3 minutes was too much, so I worked it down in 5 second intervals. Until 2.45, and I'm considering pushing it further to 2.40, to avoid the 'one hard yolk' problem. There's nothing worse than a concertina'd toast soldier.

If you are doing 2 then a soon as cooked run them under the cold tap to cool - stops them carrying on cooking.

I do large eggs from fridge, pierce rounded end, drop straight into boiling water. Rolling boil for 3 min, heat off and leave to coddle for 4 min, run under cold tap and enjoy.

Just take one egg out a bit earlier and eat it last.

If you don't have a steamer, which I don't - Put a saucepan on the hob, use a teaspoon vertically to measure the water, you'll want it about a third of the way up the spoon (not including handle ofc), plop in eggs, place lid on saucepan, leave for roughly 6 minutes depending on preference of done-ness.

I do 6 and a 1/2 to sometimes 7 because I prefer large eggs, comes out perfect every time.
To avoid the shells breaking and ending up with watery eggs, add them slowly to the hot water with a slotted spoon, this allows the steam to warm the eggs slightly before making contact with the water. The drastic temp difference is what makes them crack!
