To expect my eggs to behave logically

Always the same story. Hard boiled yolk at one end, snotty uncooked white with some soft boiled yolk at the other.

Can anybody tell me how to get an egg which has cooked white and soft yolk for dippy soldiers.

They are completely submerged in the boiling water so I can't begin to understand why one end cooks so differently to the other.

I don't keep my eggs in the fridge.

I will try Delia's method I think.

I have noticed the very thin shells as well.

Slightly off topic... Have egg shells got thinner? Every time I crack an egg open I get bits of shell in the bowl/pan. I never used to, but the shells seem less robust than they used to. Is it me or the eggs?

It's the environment in which the hens are kept plus what they are fed. As PP said, try some other brands.

I wonder if they might be on a windowsill or something, where a draught makes the top of them cold whist the rest of them stays a degree or two warmer? If this is the case, you could try keeping them in a cupboard instead, or sit on them to incubate for half an hour or so, before cooking?

I actually keep them in the unheated utility room so the temperature is cold but no draughts.

The cooking issue is the same all year round. I really am bemused as to how I can have a yolk that's soft at one end and hard boiled at the other.

Oh well let's see if Delia can come up trumps, if not I'll try some of the other ways.

Sorry this was for a completely different thread 😂 I never had an issue with two eggs boiling in one pan and turning out differently.. I would blame a wrong sized pan
