Mussels in white wine for a child?

Divinespark · 23/11/2023 09:11

Would you serve mussels in white wine to a nearly 11 year old? Strange question, but the child in question likes mussels, occasionally, the mussels in butter was supposed to be delivered but got the white wine instead lol.

Alcohol's boiling point is 78c not 100c

... I know that. But my point is that even if you get your sauce to 78 or higher, the alcohol doesn't instantly evaporate, it takes time. As outlined in the article above.

ViaRia01 · 23/11/2023 13:18

Is ‘the child in question’ your child? If so then yes that’s absolutely fine. I’d be fine with it for my own child although if it were a friend or relative, I’d be sure to check first with parents.

Based on these responses it seems most would be fine with it and see no issue at all. But in some cases if parents don’t drink and/ or have religious beliefs that prohibit alcohol, it’s important to check first imo

Alcohol absolutely does not all cook off. Especially not in the time it takes to cook mussels.

Whether there was enough alcohol present to be concerned about in the first place is the question.

When I make mussels in wine from scratch the sofrito is then boiled and simmered for ages before the mussels go in.

You don’t slosh in the wine at the end. You want the sauce / stock to mature and deepen in flavour before adding the mussels.

caringcarer · 23/11/2023 15:22

Yes, if they like them. The wine will be miniscule and largely burnt off through cooking.

Sounds delicious, and I now want moules et frites.

Alcohol does not totally boil off unless the food ends up totally dry. It mostly boils off then sort of bonds with water and takes on water's boiling point, due to a long scientific word. (Yes, I was in over my head by this point in reading about it.)

gotomomo · 23/11/2023 17:06

Of course, it's fine

Mysterian · 23/11/2023 17:10

Forgot to say, it'll be so low alcohol it'll be fine. or it won't and it'll be hilarious. Either way is a win.

Dartmoorcheffy · 23/11/2023 17:10

The alcohol would not cook off in mussels. They aren't cooked hot enough or long enough for that. Having said that the amount of alcohol in the dish would not be much and it wouldn't worry me to give it to a ten year old.

CallieG · 24/11/2023 02:21

When heated, Alcohol Evaporates So the sauce would have the taste of the wine without any alcohol.

Interesting. I use an old french recipe but just had a look at the BBC good food recipe for comparison. Both recipes do indeed involve sloshing the wine in at the end only cooking it for less than 5 minutes.

Also interesting that some people are still coming on saying the alcohol all evaporates off 😊

CesareBorgia · 24/11/2023 06:49

The volume of liquid in a sauce is going to be low, whether the alcohol evaporates or not - it will be far less than a glass of wine.

RecycleMePlease · 24/11/2023 07:01

Would and have (DS1 and I both like mussels).

Beachywave · 24/11/2023 07:03

Unless they’re Muslim then I would serve 😁

helpihaveateen · 24/11/2023 07:13

@Divinespark where are you getting muscles from? Delivered?
I’m in the midlands and have just looked at a few supermarkets online & can’t see them!

I used to have them from Morrisons as the occasional Friday treat with sum fresh bread! Had completely forgotten about it until this thread & only had them on holiday!

Wellhellooooodear · 24/11/2023 07:19

Yes! It's my DD13s favourite and has been since she was small.

Mumaway · 24/11/2023 07:43

Except of course that only a percentage of the wine is alcohol, the water part would mostly remain at 78, as it doesn't evaporate until 100.

jlpth · 24/11/2023 07:47

I’ve never had a mussel but the wine content is not an issue. So if the child eats mussels, then fine.

Childcarequerys · 24/11/2023 07:50

No but only because I’ve seen people suffer after food poisoning from them - twice !!! I can’t eat any seafood but remember 2 occasions as a child when my whole family went down with it and it was horrific I have no idea why it was so bad from mussels but I thought I’d end up with no family left (both times over Christmas) was truly awful !

IndysMamaRex · 24/11/2023 08:03

Yes. The alcohol cooks off during the cooking process

Doone22 · 24/11/2023 08:23

The alcohol cooks off. Otherwise no one could use it in cooking as we'd get passed every day.

Drfosters · 24/11/2023 08:28

we put liberal amounts of red wine in our tomato sauce which the children have been consuming since they were old enough to eat. Also my husband once over did the vodka in a tomato sauce which we had to concede might have been a bit too much even for the adults. Hopefully did no harm but time will tell! I honestly would not think twice about it. Consuming small amounts of alcohol, particularly from food, will not hurt anyone. Completely different to them drinking a large glass of Merlot. I’m impressed by the mussel eating tbh. I think I was a teenager before I got that adventurous!

Nopenopenopenopenopenope · 24/11/2023 08:32

I would have them as a kid. Not an issue and absolutely delicious.

mustardrarebit · 24/11/2023 11:18

Of course! Why wouldn't you?

ColleenDonaghy · 24/11/2023 11:27

mustardrarebit · 24/11/2023 11:18

Of course! Why wouldn't you?

Because some people aren't comfortable giving any alcohol to children, I would have thought that's obvious.

Personally I'd be ok with a little in a sauce, but fair enough if some parents would be more strict.
