Easy cheap vegetarian meals

I'm vegetarian and have 5 children. I'm looking for inspiration for some new easy and cheap vegetarian meals to make. I feel like I constantly make the same meals. Some things I already make are:

Lentil cottage pie
Lentil spaghetti
Roast veg and pasta
Jacket potatoes with cheese and beans or chilli
5 bean chilli with rice/ wraps
Chick pea curry
Pizza, wedges & salad
Veggie sausages, mash, veg, yorkshires & gravy
Egg, chips & beans
Lentil and sweet potato chilli

Looking for some new exciting ideas and I love spicy food

Stir fry with rice/noodles? You can add Linda McCartney fake duck which is very nice.

Black turtle bean chilli with brown rice - makes a change from kidney bean chilli. DC love it.

Spanish omelettes or crustless quiche - good way to use up lots of veg, held together by egg - serve with salad

Vegetable tart - preheat oven, roll out a sheet of puff pastry or use ready rolled, place on a baking tray, lay on top an assortment of vegetables (e.g. onions, mushrooms, peppers, tomatoes) chopped or sliced smallish so they will cook in the same time as the pastry. You could spread some pesto or tomato puree/paste or tapenade (a veggie type) on the pastry before adding the veg, and/or put some grated cheese or sliced mozzarella on top of the veg. Bake in hottish oven until pastry and veg are cooked through and cheese is bubbling. Could be spiced up by sprinkling chopped chillis/jalapenos from a jar over the veg.

Thai red or green curry with just vegetables, obviously no meat or fish - you could boost the protein content if you wanted to by adding tofu or Quorn or similar. Serve with noodles or rice.

Veggie fajitas - peppers, onions, mushrooms, tofu or Quorn for extra protein
Thai curries (some pastes are fully veggie)
Veggie sushi (cheap when you make your own!)
Tofu & shiitake (or normal mushroom) stays
Veggie pad thai
Whole selection of possible home made soups
Veggie lasagne, tons of options.
Veggie tagines, ditto
Imam bayildi (aubergines with tomato sauce dish)
Shakshuka
Potato rosti with eggs & sometimes homemade tomato sauce or beans
Onion bhajis/ veggie pakoras with salads, dhals, curries etc.
Buddha bowls - I like Mexican and Indian styles best, but it's super flexible
Salads with lots of roast veg (butternut squash, courgettes, peppers, onions, mushrooms, even potatoes, parsnips, beetroot, sweet potato etc) & interesting cheeses
Pulled BBQ jackfruit (comes in tins, eat with standard BBQ sides like corn, coleslaw, potato salad/baked potatoes etc)

I mean... there's whole worlds of recipes on the internet... have a Google and find what you like....?

Coconut dal, rice and pickled veg is simple and really cheap. Mixed bean cassoulet is a crowd pleaser, add sausages for extra protein

I love a wrap with salad, cheese, light mayo and quorn nuggets. It reminds me of a southern fried chicken wrap from the chippy but only a healthier version.

Can’t see noodles on your list, I copy the mini ramen dish from Wagamama and my veggie dd really likes it. I do it with tofu for her and chicken breast for my non veggie dc.

If you stir fry the tofu with some corn flour and marinade it goes crispy.

Same for katsu curry which we all like.

I find YouTube is so good for veggie Asian dishes.

Stuffed peppers or tomatoes
frittata made with any veggie filling
spinach and ricotta cannelloni
braised cabbage with apples add tofu or fake meat if you like
spicy bean burgers
roasted veg in pesto on warm ciabattas.

chickpea and lentil salad with goats cheese
vegetable cous cous with dried fruit and chilli. you can add feta if you like

Frittata - extra cheap and filling if you make pasta frittata with left over pasta.
For lunches/picnics - cheese and vegetable muffins
Falafel inside pitta bread (Although I buy falafel because I am bad at making them)

Egg drop hot and sour soup with crusty bread. Or with garlic bread, if you want to go fusion! The main ingredients are eggs, which are a very cheap source of protein, and tinned tomatoes, which are about 60p a tin in m&s.

You definitely need to add a dal to your rotation. I like to add frozen spinach, and serve with poppadoms/roti to scoop it up.
Thai vegetable curry
Bean enchiladas
Pesto pasta
Butter bean and veggie sausage stew - I use the Happy Pear recipe but you can probably find similar online
Stir fry with tofu or edamame (frozen is cheaper)
pasta arrabbiata
chickpea tagine
Sweet potato & peanut butter stew

Homemade ratatouille, if you make a big batch, you can eat some the next day as an accompliment to another dish

As above for cauliflower cheese

Pancakes savoury or sweet

To be honest any kind of soup. You can make huge batches of them so they last a while.
