To make a chicken last a week?

I roasted a chicken this week.

DH and I each had two meals from it. then I make the carcase into stock. I used the stock to make a big pan of lentil and vegetable soup ; a bowl each; then I added the bits of chicken picked from the carcase and cream, and turned it into cream of chicken soup for 3.

I planted a new rhubarb plant today, and thechicken skeleton went in the planting hole along with manure and seaweed.

I think I would be more teeny tiny if I were as skilful as some of you on here, making your food last so long. I wouldn't be such a huge heifer who shouldn't be seen in public, tipping the scales at 8 and a half stone if I could make a chicken last a week... Sad

An average sized 2.5 kg chicken only lasts me a sandwich. Have I lost sight of what a healthy adult portion is? Confused

I used to think this, but I don't now. I actually lost 9 pounds in 3-4 days, when I had norovirus last year. Unfortunately, within 3 weeks, I'd gained it all back, (coz it was mostly water!) So it's a little bit pointless really, just losing 8 to 10 pounds for less than a month before it all goes back on.

All that suffering, in absolute agony... vomiting and diarrhoea for two or three days, just to lose just over half a stone, that you gain again within a few weeks? What's the point?

I cooked Lidl large chicken, and it fed 3 people for roast. Then I made a sandwich next day for lunch. Fed rest to cats as they are fond of chicken and nobody in our house keen on leg meat.

I admire your confidence. That’s what I weigh. I roasted a chicken on Sunday. It was all gone by Monday evening, bar the stock. There’s only two of us.

Now about this chicken, I do hope it is of the highest welfare possible. Organic, grain fed, housed in luxury barns with nightly lullabies sung to them and purchased from a Very Rural farm shop. You can't buy an ethical chicken for under £20, it simply isn't possible. Cheap meat, and the people who buy it are not only vile but grim too.

You serve your family a barn chicken?! I only purchase chickens that have been raised in a loving home, co-sleeping with the entire family and taken on educational family holidays. I couldn't bring myself to eat a chicken that had been somewhere as crass as Disney, tbh.

Does it cost a bit more? Yes, but I wait for sales and we practice intermittent fasting (15 minute food window every other day) which helps the budget. My teen once blew up to a BMI of 19.5 and I could barely stand the shame! I'm convinced it was the supermarket "organic" chicken that did it. Never again.

Day 1 Roast Chicken and vegetable pie
Day 2 shredded chicken in an omelette.
Day 3 chicken rissoles
Day 4 chicken and potato crisp bakes
Day 5 chicken soup then make chicken stock with the rest.
Day 6 shredded chicken and pea risotto with the stock

Day 1 Roast Chicken and vegetable pie
Day 2 shredded chicken in an omelette.
Day 3 chicken rissoles
Day 4 chicken and potato crisp bakes
Day 5 chicken soup then make chicken stock with the rest.
Day 6 shredded chicken and pea risotto with the stock

You would need to freeze portions and defrost each day. Cooked chicken won't be safe beyond day 3

If you feed a chicken a good diet, (eg grain, leafy veg, fruit and corn etc) it will last much longer than a week, years in fact - unless you also have a fox. Sad

Roast it the first day and just look at it whilst eating something else

Second day serve ‘picky tea’ for the kids that has ‘bits’ including naice ham but no chicken. They can eat this in front of the telly as ‘a special treat’.

Third day you can smell it (bulked up with lentils) (other dried pulses are available)

Fourth day you do yellow label aisle blitz where there will be amazing bargains that feed your family for so many days you don’t need the chicken and especially if you have been and bought a 90kg bag of rice as it’s cheaper like that even paying extra mortgage for an additional kitchen to store it in.

Fourth day fajitas. Obviously

Fifth day something including pesto. Obviously. (Extra points if you made it from something Green you picked yourself like nettles from the local rec)

Sixth day stock from the carcass that is greasy and revolting but has the taste of pure humble brag so you will enjoy it anyway.

Seventh day the chicken will rise again and you can repeat the whole process.

We follow this but stretch it out. it does take a few cycles but we take photos so we can put on a slide show. It helps with the "think chickeny thoughts" day on the menu planning.
We also have a "remember the chicken dinner memory" one. The absolute favourite though is "chicken charades"! Always a hoot.

I usually get 3 days out of a roast chicken and usually a bit to freeze but I properly strip it down then make chicken stock from it.

So day 1 - steam roasted chicken - strip the rest off whilst warmish its easier and make stock that evening.
Day 2 chicken rice noodles soup for lunch
Chicken and pea risotto for dinner
Day 3 - spicy chicken salad lettuce cups for lunch
Spanish paprika chicken - peppers tomatoes and shredded chicken
Day 4 (frozen leftover meat on day 2 defrosted) chicken and spinach puff pastry tart

YABU. I was informed by MN that Fajitas aren't Fajitas unless you grill the chicken. Its A STIR FRY!!!! 😁😁😁 I add a shit ton of paprika, peppers, onions and stick it in a wrap with salsa and sour cream but it's not grilled. FfS that's us told. You can also add the roast chicken bits to a jambalaya but I also cook this in my wok so it's stir fry! Everything cooked in a wok or frying pan is a STIR FRY!!! Fried eggs? From when you resuscitate your roast? ... stir fried eggs. BTW I normally preform necromancy on day five so you can have the eggs on day 7. Hth

How many people are we talking about OP?

I often think of the Mumsnet chicken when I have mine for a Sunday roast -just me and 2 children. We eat the breast and then the day after have chicken breast sandwiches, and the day after that chicken drumsticks salad for me. If I have time I boil up the leftover bones and meat on day 4 with potatoes, carrot and onion and chop up a single breast to add in extra meat and it will serve me about 3 or 4 portions to freeze and eat later. It genuinely feels like it's feeding us for most of the week!

I do this once a fortnight.

Remember to make magic stock for soup. I am shite with a mumsnet chicken because we pick at it, make sandwiches rather than meals with flakes of said chicken, throw it to the foster kittens like a lion tamer and finally every time I make stock it is vile and gets thrown out.

I love this post. Wish you were my neighbour. We'd get on so well.
