Help! Can I serve this lamb?

Doing a lamb casserole for Mother’s Day lunch, browned off the lamb and precooked the veg/sauce etc. intended let it cool then put it in the fridge overnight. Will need an hour in the oven today. Just realised it never went in the fridge! So has been out ‘cooling’ for 13 hours. Is it still safe to cook??

No, I wouldn't tbh, and I'm generally on the relaxed side about this kind of thing.

Yep. The initial cooking stage will have killed any problematic bacteria. It would need to be contaminated with something in the cooling stage for it to be a problem. But then you're going to cook it again, so I likely to cause a problem. I'd make sure the thickest piece of meat hits 80-odd degrees today.

I'm a stick it in it will be fine - normally.....but......had you only half cooked the lamb? Or was it cooked through? If the former I would worry.....also how warm is your house. If warm......I would err on the side of caution and have something else.

If by browning the meat, you mean it was actually cooked properly but just not long enough.....then I might risk it. Again only if your kitchen is quite cold.

That’s not how it works. At room temperature, bacteria grows incredibly fast and can make you sick. Reheating something that has been sitting at room temperature for longer than two hours won't be safe from bacteria.

If you reheat food that was forgotten on the counter overnight or was left out all day, will it be safe to eat? TWO HOURS is the MAXIMUM time perishable foods should be at room temperature (ONE HOUR at temperatures 90 degrees F and higher). This INCLUDES the time they're on the table during your meal.

Oh good I really don’t want to poison my mum on Mother’s Day! But I also really don’t want to waste this giant casserole and have nothing else to serve! Was hoping for a unilateral ‘it’ll be fine we do that every week’ from everyone 😩

In a situation like this where the second cooking will kill anything of I would, yes. Fed family for 25 years, not a problem yet.

I often leave food on the side to cool and forget to put it in the fridge, I always just carry on and cook it

It’s fine really. Especially if your house is cold overnight because you’ve left the heating off.

Annoyingly not that cold, heating has been off but it’s currently 15 degrees in the kitchen. A week ago it would have been much colder!

We would eat it here if it was going to be cooked at high temperatures again. But we aren’t precious about this stuff and never get ill.

I wouldn’t but I have been in hospital for over a week with Salmonella poisoning before and wouldn’t wish it on anyone!

You didn’t cook the meat all the way through, you just browned it. I really wouldn’t serve that.

Cant you just go out and buy fresh ingredients?
