Help! Can I serve this lamb?

Doing a lamb casserole for Mother’s Day lunch, browned off the lamb and precooked the veg/sauce etc. intended let it cool then put it in the fridge overnight. Will need an hour in the oven today. Just realised it never went in the fridge! So has been out ‘cooling’ for 13 hours. Is it still safe to cook??

Lamb and beef are fine. I’d eat lamb that’s been left in the slow cooker for 3 days, let alone out for one night.

As long as you are properly cooking it and not just heating it through, I think it should be fine.

I wouldn’t. It’s not the bacteria that causes the problem it’s the toxins they produce when they multiply. Ecoli had a doubling time of 20-30 mins.ie. If you start with 100 bacteria, 20 mins later you have 200, 20 mins later 400, 2o mins later 800. You get the drift. Depends how well you browned it but personally I don’t think it’s worth the risk.

I wouldn’t do it, I couldn’t take the risk.

If you do decide to go ahead and use it please tell your mother beforehand, so that she can decide if she wants to risk food poisoning.

No, definitely not.

It wasn't cooked - you just browned it and now it's been sat out in a warm kitchen for 12+ hours.

Thank you all for your responses, really appreciate it. If it was just me eating it I’d stick with it but I just can’t take the risk with my mum and I won’t enjoy the meal if I’m on edge worrying about it so have decided to bin it and buy a ready made version when the shops open. Such a stupid waste 🙁

What half cook meat then leave it out all night?

(If it was fully cooked I'd say go for it...)

15 is cold, ok not a fridge temp but not warm. And you have sealed the meat even if not fully cooked and will slow cook it today. Its fine. You know fridge freezers weren't around until the 50s and everyone still ate meat.

I’d eat it. I often batch cook, then accidentally leave the Tupperware out all night and then freeze

It'll be fine. weather is still fairly cold and is colder overnight. I only am cautious with stuff left out over summer. Haven't poisoned us all yet!

I'm always leaving food on the side to cool.
Then I walk into the kitchen and it's still on the side cooling, I eat it all the same and I'm never poorly from it, even rice.
So long as it's cooked through and piping hot, it will be fine.

If you decide to serve this, at least tell your guests what you are doing. They should have a choice to eat or not.

Having experienced truly bad food poisoning and getting a glimpse of what it can do, ivmmmamk

Don't bin it, even if you don't serve it to your mum you can have it another day. Cook it today and freeze it.

I've never managed to get food poisoning yet, despite eating all kinds of foods I've left out, eating raw foods and reheating rice. It's all about ensuring things are properly heated, at 70 degrees the bugs are killed off basically, as for raw stuff, think I must have a cast iron stomach, oysters anyone Grin

Nope no way I would chance it. Half warmed through meat left at room temperature overnight?! Not a chance. But I am a pretty risk averse person, especially when it comes to potentially giving guests food poisoning 🙈😄

Unfortunately it’s colossal and our freezer is rammed so at most I think we can freeze a portion or two. I seem to have made enough for about 8 portions!

I think you're doing the right thing by binning it, sadly. Err on the side of caution when you're serving guests, particularly older ones - food poisoning can be debilitating. M&S, if there's one near you, does some very nice lamb ready meals.
