What do you have for Boxing Day?

I’d normally think leftovers..but it’s only the 3 of us this year, so I haven’t got loads for Christmas dinner and even so, I imagine Dh will eat any bits leftover on Christmas Day evening.
Do you make a whole new meal for Boxing Day or eat what’s lying around or what?
Ive planned Christmas Eve food and obviously Christmas Day, but not Boxing Day 🤔

We have a barbecue! Steak, sausage, bakes potatoes, coleslaw. Even if it’s raining we bbq under an umbrella

Always cold turkey and chips...generally with the addition of the Boxing Day ham, pork pie, pickles, maybe bubble and squeak, salad and proper Hellmans mayonnaise. It's my absolute favourite meal of Christmas.

Dutch MIL was born and raised in Indonesia, so taught my late DH lots of yummy Indonesian recipes. We don’t do a full rijstafel, as we are too stuffed after Christmas day, but we do make an Indonesian style dish with leftover turkey, flavoured with peanut, lemon grass, chilli, soy and ginger, served with a green salad. Pudding is artisan orange chocolate cheesecakes from a baker in Forfar, who has a stall at our farmers’ market.

We have a Chinese takeaway delivered on Christmas Eve, but we order a bit extra, the leftovers and the extra go in the fridge for boxing day.

Cold leftover meat/stuffing/chipolatas, all the leftover veg fried up for Bubble and Squeak, pickles, chutneys, pork pie and (DM does this: homemade chips in the chip pan. We don’t as no chip pan).

Leftover Christmas pud and the Boxing Day trifle for pudding.

More turkey sandwiches, cheeses, pate and Christmas cake in the evening. Yum.

Last year I did a joint of beef in red wine in the slow cooker. Fabulous and so easy. Tesco half price joint is in the freezer already

I have turkey & trimmings on Christmas Day, and scampi & chips on Boxing Day. I also buy myself some nicer bread than normal for toast in the morning, and allow myself a little extra butter on it too 😀

Jamie Oliver’s Boxing Day soup.
its a fantastically easy, throw everything in one pot then relax meal.
literally, all veggies, any meat, stuffing, pigs in blankets etc all gets thrown into a pan, top up with water, boil then blend into a smooth and tasty soup.

it really is as easy as that.
