What is everyone planning for dinner

I seem to have brain fog about what to do for dinner today. Last night it was lamb & cous cous, other regulars are lasagne, bolognese, marinated chicken etc.

I don’t want the hassle of full Sunday roast but need some inspiration please

For context 2 adults & 3.5 year old twins

Probably in the slow cooker. I love Coq au vin but don't like the chicken going purple with red wine so using white suits me perfectly.

Probably with mash and a green of some sort.

A roast chicken is very low effort.. I would just do that. Coleman’s packet bread sauce. slice potatoes up small and roast in oven so they are quicker than normal roasties and not 20 thousand calories. Whatever veg you have.

Fish pie. It is a bit of a hassle but it's got the advantage that you can prep in advance and wash all the pots up before dinner is served.

Cooking a chicken in bag and a small joint of pork and stuffing with roast potatoes, mash, fresh green beans, frozen sprouts, fresh carrots and frozen peas. Use left overs for bubble and squeak tomorrow with cold meat and beans I think. Have some chicken left for sandwiches etc.

I was going to to a casserole type meal as we were all going to be eating at different times.

However DD has been flying the porcelain plane since half six, so it’s going to be a case of whatever she fancies and I don’t think I can be arsed to cook if I’m sorting the vommy child all day.

So I’m going to despatch DH for a kebab later on.

Bought some leek and chilli sausages from the butcher yesterday, having those with sweet potato mash, broccoli and carrots.

I’ve made an apple crumble as well 😋

I have a pork tenderloin in the fridge that needs using. I think I'm going to make a mustard sauce to go on it and serve with roasted squash and peas.

We're having a 'cheats' roast beef - roast potatoes, broccoli and carrots (only vegetables the children will eat!) Yorkshire puddings and fillet steak instead of roast beef, so only takes a couple of minutes to cook!

A decent shop bought chicken pie (or made yourself with pre bought pastry?) with mashed potato and steamed vegetables.
