To think that omelettes are under rated?

Quick and easy to make, cheap, can be eaten as a light meal or with a few chips/jacket potato for a more substantial meal.
I just had a cheese one with some salad, Mmmmm.

I do find them a bit rich, so maximum of two eggs here. However, there's certainly a time and a place where they go down really nicely. We had one with mushrooms yesterday, sometimes it cheese, tomato or onion or a mixture.

An omelette sandwich is a stable weekend breakfast for me. One egg, beaten well, splash of water, seasoned oil in the pan. Whilst cooking, get two slices of bread (preferrably white), butter and then spread tomato ketchup on both pieces. When omelette cooked, slap between the two pieces of bread and voila! Delish...

My DD is a very fussy eater but has just added omelettes to her list of food she will eat.
a) I'm amazed
b) so pleased as they are easy, cheap and healthy.

I put leftovers in omelettes if there's not enough to do something proper with. Last time it was a lasagna omelette. It was a delight.

I don't mix the tuna into the egg. I half cook the ommo then dump the tuna cheese (and chilli or whatever you fancy) fold it in half and turn down low.

That finishes cooking the om and heats up the contents nicely so you don't end up with wet cold fish

Sounds grim but I promise you it's not

I love scrambled eggs (and cheese and ham) but omelettes give me the ick. They're a bit rubbery.

My old house mate used to make a spaghetti omelette. Same principal. Half cook omelette, dump left over spag bol in the middle. Flip over and finish cooking. Hangover cure right there.

Please no-one ever say 'om' or 'omo'. It's horrific. I've got an omlette maker as I always cock it up in the pan.

What's the trick to make them so they're not rubbery? I much prefer scrambled or poached or boiled or fried eggs to quick-cooked French omelettes. I can make frittatas and tortillas OK, but I've never felt I've got the traditional French ones right. Either that or I have got it right but I don't like what I've done. Husband and children like them on the odd occasion I've made them, but I don't much.

My method has been: hot pan, melt some butter in it, tip in some beaten egg (2 or 3 eggs), cook very quickly so it's still moist in the middle, lifting the edges so the raw egg runs underneath and cooks. Add fillings, fold, serve. What am I doing wrong?

I hate omelettes - I only like my scrambled eggs runny so omelettes just taste overcooked to me. Even if the inside is runny the outside is still rubbery.
