To ask if any knives actually last...

Looking for some help please. With kitchen knives.

I don't know what I'm doing wrong, but my knives all go blunt, and get rusty coloured spots.

DM is going to get me a nice knife set for my birthday, and wanted to know what people have, and really rate, for around the £300 mark.

I keep mine in a drawer (knife blocks creep me out) and apparently this is blunting them? Does it really affect that much that they are in a drawer, or is it marginal?

I don't like the global knives, or anything with holes in/all metal. I like a classic look, or opulent look, with a proper handle.

I cook from scratch most days, and they need to be dishwasher safe. Does such a set exist?

You have to sharpen your knives every time you use them.

I'd recommend that you use this one

ButtockUp · 13/02/2022 20:42

Strongly agree with @BIWI

Pinkflipflop85 · 13/02/2022 20:42

Sharpen them regularly.

Wash and dry them immediately after use.

Don't just chuck them in a drawer.

Windyone · 13/02/2022 20:43

I use Global (sorry!). Never put them in the dishwasher not sure any good knife should go in the dishwasher but I’m not an expert. You need to sharpen your knives regularly, my husband does it every time he uses them.

HeadToToesNo · 13/02/2022 20:44

Victorinox, kept in a knife block and sharpened regularly.

LuckySnips · 13/02/2022 20:45

DH puts ours in the dishwasher and they get those rusty spots on. Really they should be washed by hand. Sharpen them regularly. I've got cheap ones from Ikea and they're good as new once sharpened.

Krakenchorus · 13/02/2022 20:45

Never put sharp knives in the dishwasher, I was always told. And I don't sharpen every time I use them - though I know I should - but a few times a month. Does the trick.

LittleBearPad · 13/02/2022 20:45

No dishwashers. Sorry.

switswoo81 · 13/02/2022 20:46

Newbridge stainless steel knife block. Used daily for the past 13 years never sharpened and washed in dishwasher.

Gladioli23 · 13/02/2022 20:46

Do you sharpen them?

I have a Joseph Joseph drawer knife block, would that work? I got it from TK Maxx for not a huge amount of money.

I also buy my knives from TK Maxx. I like Richardson Sheffield Sebatier X-Chrome- Molybdenum. Usually about £6-£9 in TK Maxx for a medium one, got a big one in Macros for £15. They come with a 25 year guarantee - mine have been going about 3-7 so far (I keep adding to the collection) and show no signs of wear at all as long as they are sharpened.

Gladioli23 · 13/02/2022 20:47

PS I also dishwash mine!

OneEpisode · 13/02/2022 20:47

I detest knife blocks too, but out knives are all metal. Have lasted decades. Why don’t you want all metal?

chipsandpeas · 13/02/2022 20:48

i have a cheap set prob from asda and had them about 12 years, sharpen them every now and again and they are still decent

mbosnz · 13/02/2022 20:49

Wusthof Trident. . . although Pro-Cook's been pretty bloody good too. But the Wusthof Trident we got in 95-96.

LuckySnips · 13/02/2022 20:49

I have previously had one of these knife blocks - they're not like the wooden slot kind.

Robert Welch knives are amazing. Lovely set of six for your price.
But, must be kept in a knife block, sharpened with the right sharpener once a week, and hand washed and dried straight away

BeBraveAndBeKind · 13/02/2022 20:51

I use a knife block and always hand-wash, I never put them in a dishwasher. I've had a chefs knife for 25 years that's almost as good as new. None of them were very expensive, you just need to care for them and sharpen regularly.

LakieLady · 13/02/2022 20:52

I've got some Prestige knives that I bought when I left home in 1975, and they're still fine! I have a few knives that are several years old and still in good nick.

However, I don't chuck them in drawer, they're kept in a block, and I give them a quick sharpening with a steel before and after every use. I don't put them in the dishwasher either (a chef friend told me it ruins knives because of the hot temperatures) but just wipe them with a damp cloth before putting them away.

If you don't want them kept in a block, putting them in a knife case or roll would be a good idea.

A friend has just bought a set of Elite knives from Pro Cook, and they are great to use. They're in the sort of price range you're considering.

VelvetChairGirl · 13/02/2022 20:53

All my knives came from TK Maxx and I have had em for years all different makes, none of them go rusty, what are you buying?

any knife should last as long as its full tang and they all need sharpening from time to time.

none of my knives cost more then about £20 and they are kept in the draw.

BIWI · 13/02/2022 20:53

drawer

BIWI · 13/02/2022 20:53

Sorry Blush

CMOTDibbler · 13/02/2022 20:54

I think not all metal and dishwasher safe don't go together long term. We have Global, and despite a distinct lack of care and living in a drawer until last year, the worst that has happened to the 25 year old oldest knives is some tiny rust spots which buff off. The Victorinox ones bought around the same time are long gone

scaredsadandstuck · 13/02/2022 20:54

Yep you need to sharpen them regularly, don't put them in the dishwasher and keep on a magnetic rack or in knife block.
