To ask if any knives actually last...

Looking for some help please. With kitchen knives.

I don't know what I'm doing wrong, but my knives all go blunt, and get rusty coloured spots.

DM is going to get me a nice knife set for my birthday, and wanted to know what people have, and really rate, for around the £300 mark.

I keep mine in a drawer (knife blocks creep me out) and apparently this is blunting them? Does it really affect that much that they are in a drawer, or is it marginal?

I don't like the global knives, or anything with holes in/all metal. I like a classic look, or opulent look, with a proper handle.

I cook from scratch most days, and they need to be dishwasher safe. Does such a set exist?

Sharpen them and hand wash them, and any other mediocre knive will last for years.
Good sets come with a sharpener.

I put almost everything in the dishwasher, but never knives. Absolutely never.

You can get an in drawer knife block. Don’t kick throw them in loose.

We have one of these chef's knives and I keep it in the drawer with the plastic cover it came with, rarely sharpen it, and it's still good 13 years later. It's a lovely knife to use and I'm tempted to buy more

Knife blocks are a haven for bacteria. If you use one be sure to wash your knives thoroughly before use.

I have decades-old knives that I put in the dishwasher and never (well VERY VERY rarely) sharpen!.....I prep and cook happy as Larry. What am I missing here! 😝😝

I have a kitchen devil knife for chopping vegetables which is 35 years old. Still my best knife, sharpened every couple of months.
No dishwasher and kept on a magnetic rack.
When it can no longer be used I will have to buy ready meals Grin

I understand he busy lives, jobs, small children etc etc...but you cook from scratch every night which must take 20 min plus. Hand washing a knife must take 15 seconds max. Which seems a strange trade off for the sake of ruining a set of £300 knives

I bought a set of 3 global knives over 20 years ago. I sharpen them every now and then and put the back in the shaped box they came in.

I thought they dull knives every time you put them in and out of the block? Also, they can harbour bacteria and can't be cleared on the inside. These are the things I'm wary of with a block, but happy to be proved wrong.

hmmm. Ours stay sharp enough, though we never sharpen them (10-20 years of never sharpening). We have a motley selection of mostly cheap knives, magnetic rack... We do just wipe / hand wash though.

Rust spots sounds dish-washer caused.

I like blocks fine but they take up precious counter top space.

Victorinox knives all the way with an AnySharp sharpener.

I'm a chef and 95% of us use them as they aren't overly expensive, last years and even when they lay dormant in my toolbox for almost a year during lockdown, cleaned up beautifully.

If you don't like the idea of knife blocks, I suggest a chefs knife bag. They come in various sizes and can be rolled to fit in a drawer or shelf.

Never put knives in the dishwasher, just hot soap and water will suffice and sharpen before each use.

I've got some knives that come with a sheath that sharpens them every time you use it. Also a victorinox knife that I really, really love.

I'm not sure you need to spend £300. Just sharpen and be careful how you wash and store them.
