to think Heston Blumenthal's WTF

i wateched him make risotto late last night, i have seen a few of his programs and have always wondered is it worth all that time and effort.
is he not just a short, bald, over considered tosser ( may be a bit harsh but you get my point)

Oblomov - peel and slice tomatoes, season with salt and pepper, press the slices into a mould and weight down.

Basil sorbet - shedloads of basil, light sugar syrup; cook gently together, strain the bits out and freeze (I use the icecream maker)

Parmesan and mozzarella icecream - make a savoury custard (cream and egg yolks, salt and pepper), add mozz and let it melt... grate in lots of parmesan and let cool. Strain out the bits and then bung in the icecream maker.

I wish the Great British menu thing was on again - I liked Galton ,though he seemed a bit highl;y strung and have a secret thing for Marcus Wareing because he has nice eyes (and makes fab puddings)

Oh and then unmould the tomato, slice thinly with v sharp knife, and serve with small scoops of the ices (I use a melon baller)

The Great British Menu book is reduced (half price I think) in Waterstones.

I've never really looked at Richard Corrigan but he was v good on that.

Lapin I was more in awe of your style of dinner party. When someone comes to ours they get minted lambs chops with steamed veg. And then a home made trifle.

LOL, I made Baked Alaska for a NYE party once. It was NOT a success (melted) but we were all so banzaied it really didn't matter - we ate it anyway

I love homemade trifle. Have you tried using amaretti biscuits, or gingercake instead of sponge? Gingercake with rum and pineapple makes a lovely tropical trifle.

Merryann, thats where it comes from, from my mum.
She used to have dinner parties for 12, 5 courses, beef wellington, soups , and fish and starters.
And everyone thought her Baked Alaska was AMAZING and they always gave a hint of a request for it. And she never let on how easy it was.
Its so 70's, isn't it ?

yum trifle ideas. I once made an Elizabeth David old fashioned one with her recipe for everlasting syllabub on the top and real custard- v nice. I do like my MILsversion which is plain old sponge,jelly,sherry,Birds custard and cream though.

I like the guy and he has an interesting approach - I just think he's a "flim flam" man. All that faff for loads of dosh - I'll ask him for a dripping butty and get him to do something amazing with that (cos I've no doubt that he could)

Heston does the best roast potatoes . Even my junk food loving DP insists we get Maris Piper potatoes and follow his recipe as it works so well.

Nobody cared we were beyond eating at that stage.

hmmm...i'm in two minds about heston. on one hand i get annoyed by all the liquid nitrogen and inflating things with aerosols. and his risotto absolutely mung, as far as i could tell from looking. The italians i know think the simpler the ingredients the better the risotto. some make it with just onions, garlic and really good stock, then a really nice hard cheese, doesn't have to be parmesan. But on the other hand, there is a science to food and i believe it is worth exploring, and it may as well be him.

We had plain white risotto with fresh pesto last night (from Jamie's Italy) - so scrumptious.

Carm - my mum dropped a lemon meringue pie onto the oven door once. Of course all the meringue stuck to the door and we had a not very exciting pudding!

Re trifle, I also do a meringue topping, because if you make your custard you always have egg whites left over... you just need a blowtorch to crust it.
