To ask how to reduce our meat consumption

Inspired by a thread on here about eating less, better quality meat, I reflected on our eating habits and our household consumes a lot of meat - most evening meals are meat based, as are a lot of lunches, which is very very poor environmentally.

Both myself and my husband very overweight and desperately wish to change our lifestyle, we also have a 2yo, who isn't too much of a picky eater and we really don't want to pass on our poor eating habits to her.

So, I'm hoping for you to share your quick, easy and healthy veggie meals, we love (particularly red) meat, so this will be a huge adjustment for us, but after some self reflection over the past couple of days we have to make some changes.

We are big fans of curries, but not to keen on pasta really so anything along those lines but open to any and all suggestions

When we decided to really reduce our meat intake I was at a bit of a loss and didn't want to get stuck in a rut of substitutes and the same meals over and over. So we started Gousto for a while and stuck to their veggie options. Loved it and it was a great way to start. Now we use the recipes even though we don't get it anymore. And it's inspired different ones for us too. Also absolutely love some of the BBC good food recipes. This lasagne is my absolute favourite lasagne now and I'd pick it over beef lasagne which I used to love:

I can also recommend the book @LadyJaye recommends - easy way of making lots of new quick vegetarian meals

Whereabouts are you/your mum from if you don't mind my asking?

It is weird which products are veggie and which aren't isn't it! Lots you wouldn't realise without checking

@shrodingersbiscuit I was afraid you'd say that my Tesco doesn't stock it

Also OP if you're keen for your diet to be more environmentally friendly it's important to eat seasonally. It should taste better and be better value too.
