To ask the secret to good mash…

Seriously! How do you all make your mash?! I have been trying for years now and no matter what I do or how I make it, it is always lumpy and bland! Please give me your useful tips so I can master a good bit of mash 😂🤭

Good sized know of butter, bit of double cream, some salt and mash like your life depends on it. Also make sure you cooke the potatoes until they are basically falling apart, drain them and let them steam dry in the pot until they are really dry.

Give it 5 mins extra to cook.
Do mash first, it stays hot.
Salt the water.
Drain.
Add dash milk and slice of BUTTER.
Mash it, taste it, mash in extra salt.
Leave while you plate up. See if it has lumps and mash again if needed.
We use a metal masher.

I use an electric whisk.

No milk for me, it makes it less luxurious, just lots of butter and salt. And if it’s the right kind of meal then some grated strong cheddar.

Firstly make sure you’re using the right variety!

Make sure the potatoes are cooked until very soft.

Add generous amount of butter. Mash with masher.

Stir well (I use a wooden spoon), but don’t beat. Season with plenty of salt and pepper.

Then you can mix it up sometimes by adding garlic/ground coriander/white pepper instead of black/cheese/etc.

Yes, it needs salt. Many home cooks use far too little salt because they're worried it's unhealthy. But even if you put in what looks like quite a lot of salt, it's still likely to be less than the factory made equivalent.

I once read good mash has equal weight of potatoes and butter. Never tried it. Often tempted.

No wonder it is bland. IMO potatoes need salt.
Adding hot milk helps the potatoes break down more.

@JayAlfredPrufrock Delia smith recommended using a whisk. It really does work. I use a masher, then beat the potatoes with a spoon.

However, do not use a food processor as the potatoes go horrible and gluey.

Don't use the hand masher, use the electric whisk, add butter and salt, no mild as it makes it too sloppy.
