To ask the secret to good mash…

Seriously! How do you all make your mash?! I have been trying for years now and no matter what I do or how I make it, it is always lumpy and bland! Please give me your useful tips so I can master a good bit of mash 😂🤭

Bake the potatoes rather than boil. Scrape into a pan add butter, salt, double cream. Use a wooden spoon to beat until is gels a bit together. Add more salt and pepper to taste.

How to tell if your ready to mash.
Take the back of a knife, the wrong side, try to cut a piece against the side of the pan. If it cuts easily, you can mash it.

I once read good mash has equal weight of potatoes and butter. Never tried it. Often tempted. Grin
This is true...that amazing mash you get in a good restaurant is literally 50% quality butter.

I let the potatoes steam for a few minutes, so they're quite dry when I start mashing them, add lots of butter and black pepper.

Then it's just a matter of effort in the mashing, and making sure you scrape the potato away from the sides and into the middle as you go, so they all get thoroughly mashed. And knowing when to stop - if you overmash they go sort of gloopy and more like a puree. I like my mash to stand up.

Potato ricers are good if you like your mash light and fluffy. But butter is key again. When I want fluffy mash, I use the ricer and fluff it up still more with a fork.

Frozen. I’m a good cook but I don’t make mashed potato or chop onions. Mainly because life is just too bloody short.

Frozen plus a good knob of butter, drizzle of cream, a dollop of mustard and lots of seasoning will be absolute hit.

Oh yes I used the baking method last week! It does turn out brilliant. But I’m too lazy to do that too often...

I also usually do let the potatoes sit and steam for a while (5-10 min) after cooking but it depends on whether I’m in a rush to serve up.

Some foods need salt to bring out the flavours and potato is definitely one of them.
Splash of whole milk, plenty of butter and as much salt as needed until it doesn't taste bland anymore. I know everyone has already said basically the same thing but my mind is boggling at the fact that someone is complaining about bland food and hasn't thought to first add a bit of saltConfused

Butter, salt, pepper, milk and an electric whisk.
Gives the lightest, fluffiest and tasty mashed potatoes.
Depending on what the mash is served with-if using on a cottage pie, grate some of the most mature cheese you can find into it.

I’ve never added salt because I hate it 🤣 but I’m going to try tonight!! I’ve also never added salt to my pasta, veg ect… should I be doing that too?!

You don't salt potatoes!

How can you eat them, they need salt to bring out the flavour!

My grandmother was head cook in a pit head canteen and taught me all the basics.
One of which was to add salt and taste whatever you are making!
Though with a pan of potatoes you don't usually taste as you know how much they need.

I can't tell you how much that is as we have a hand carved salt spoon made by wife that is just right!

I am sure Delia covers this in How to Cook.

Yes to all. Unless your family throw salt at food without trying it anyway.

If I'm cooking for FIL I cut back on the salt during cooking because he just throws salt on everything anyway.

Salt makes most things better. Honestly. Cook your pasta with salt. It tastes much better.. that's one place I really really saw the difference

After I had my first baby someone dropped us a load of those ‘COOK’ pre done meals. One of the sides was mascarpone mash. We thought it sounded a bit weird, turns out it’s flipping delicious and now we always put a big dollop of mascarpone in mash and it’s game changing Grin

Yes! Salt the water so it tastes like sea water, then season the cooked product too.
