To ask about Victoria sponge cake

Does jam go on the bottom and buttercream on the top in the middle filling? Or Is it buttercream on bottom and jam above?
Does it matter?

I always put the jam first as find it impossible to spread jam on cream smoothly. It’s easier to do a thin layer of jam and then cream on top of that.

If you wanted jam on top of the cream wouldn't you just spread jam on the underside of the top part of the cake rather than try to spread it on buttercream?

It's actually whipped cream and jam. And this is a hotly debated topic. Classically cream then jam, though probably easier to spread cream over jam than vice versa.

With your buttercream version I would do buttercream then jam, otherwise too messy.

Why on earth have people spent aeons trying to smooth one on top of the other when it's so bloody simple?! 🤯 All that wasted time I'll never get back!!

That's what I do although sometimes use whipped cream but same process

I love a very thick layer of buttercream. Yummy! Whether that’s ‘right’ or not, I’m not sure. I agree that spreading jam onto cake first is easier.

I usually spread jam on one half, cream on the other and then sandwich them together.

Never cream for me personally. Always buttercream. A thin layer of jam spread first, with buttercream on top.

My Mum (a cookery teacher no less) does a thin layer of jam on each sponge and has bettercream in the middle. She always does it perfectly, I have no idea how! I'm of the jam on one sponge, cream on the other school.

I put butter cream or fresh whipped cream on the bottom layer and jam underneath the top layer then sandwich them together. Since I prefer to use a preserve rather than thick jam, I find if I put preserve on the bottom it tends to run out down the sides of the sponge if squashed by a top layer of cream or butter cream. Whatever you do though, you can’t beat a Victoria sandwich cake!

Oh and anyone struggling to spread the cream on the jam, the other option is to pipe it.....

That's what I do. Spread jam on one half, then buttercream/cream on the other half. Then put together with the smoothest/flattest sponge at the bottom so it doesn't slide or wobble on the plate. Sprinkle with icing sugar and you're good to go.
