To ask about Victoria sponge cake

Does jam go on the bottom and buttercream on the top in the middle filling? Or Is it buttercream on bottom and jam above?
Does it matter?

Coffee sponge cake, coffee buttercream in the middle and on top, and walnut halves on top, round the edge.

If I’m doing jam and buttercream/cream I put jam on the top, cream on the bottom and put them back together.

This has just reminded me of my school cookery teacher who would tell anyone off that dares refer to it as a Victoria sponge. Apparently it was a ‘Victoria sandwich cake’.

DH had a Victoria sponge cake disqualified from a local produce show because he dared to put buttercream in it, must have been someone from the WI judging it! He was not happy.

If you use fresh cream, how do you store it? Out of the fridge, the cream will go rancid, but in the fridge, the cake will go hard.

Warm jam in microwave and spread over bottom layer. Allow to cool. Take a zip lock food bag or a disposable plastic piping bag filled with buttercream and pipe a line around the outside edge. Leave for a few minutes to firm up before piping the rest in concentric circles inside the line. Pop top on and press lightly.

Fresh cream is nicer but you have to whip it firmer than you think or it squeezes out when you put the top on. This is tricky because you run the risk of turning the cream into buttery lumps which is gross.

A cream cheese frosting (I know, I know...philistine) can be good with the right recipe.

Basic Victoria sponge recipe can be pimped with a lemon drizzle, lemon curd and fresh cream too (just don't tell the WI).

It doesn’t matter which order the jam and buttercream go.

If it is fresh cream, it’s delicious but it’s not Victoria sponge.

Yes, that’s true. I retract my former comment. You can call anything a Victoria sponge, but it’s not a Victoria sandwich if it’s got whipped cream in.

Good lord, I love buttercream as much as the next person, but not on a Victoria Sponge. Shock

Jam and cream in the centre (jam first, then cream). Light dusting of icing sugar on the top. That's it.

If I'm feeling fancy I'll add fruit to match the jam (layer the fruit over the jam before adding the cream). Raspberries with raspberry jam is great, though my favourite is blackberries with blackberry jam. The blackberries need cutting in half though, or the two cakes struggle to stick together and it all gets a bit unwieldy.

That's because your teacher was correct! Sandwich because you sandwich it together, and also because it's not a true sponge.

A proper sponge cake doesn't have any fat in it.

But anyway, jam on one cake,buttercream on the other.

@GreyhoundG1rl I'm not good at sharing cake. I just want to make a deep Victoria rather than the paper thin ones I normally manage (maybe I don't beat the mixture enough or something).
