That I don’t know what I want to eat except that I’m craving healthy food.

I’m over weight so craving something healthy is super good. Trouble is I don’t k ow what it is that I’m craving. I want to eat something healthy and warm. Not soup. This craving keeps happening every lunchtime and it’s frustrating not knowing what it is that I want!!

Roasted veg with goats cheese or feta is super yum. What about veggie sausages with scrambled eggs and tomatoes?

Ling the love for the winter coleslaw. Red cabbage, celery, fennel carrot...possibly apple.

My go to is to chop up a bit of chorizo and fry in a saucepan until crispy. I then whisk three eggs with some crushed garlic, dill, and paprika, then scramble the eggs in the chorizo oil. Meanwhile, I microwave a few lumps of frozen spinach, then mix it all together. Sometimes I add some cheddar but most not.

No matter what I’m craving, if I make this I’m happy!

My favourite lunch atm is a toasted bagel thin filled with hummus, chopped peppers, and olives. The crunchyness/warmth combo is really satisfying.

Just had watercress, toasted hazelnuts, blue cheese and cherry tomatoes with balsamic and olive oil dressing. Hit the crunch, juice and flavour buttons perfectly.
