To feed my family potatoes for nearly every meal!!?

Now I have to say I am a fan of the humble spud.. and I'm making a lot more meals than usual.. but every meal seems to involve bloody potato!!

On top of this the kids (3 and 4) have decided they REALLY like a jacket with cheese and beans for lunch, so have been having that most days too!

Do you think it matters if most meals have spuds as the carb part? Should I make sure I mix it up or are lots of potatoes actually fine in a balanced diet?

Going by what I was fed as a child, pasta and rice hadn't been invented back then. Well, my mother hadn't discovered them anyway. Grin We had either potatoes in some form or bread and butter with every meal. Occasionally both.

Well I've managed 1 out of 6 evening meals without potato - Fajitas! And will probably throw in the odd sandwich or hoops on toast for lunch. Sorted!

Yes I’m having potatoes for dinner most days now. I suppose while I was working I considered pasta/rice/noodle based dinners “faster”. However we are now having potatoes with roast chicken/marinaded pork chops/oven baked salmon/breaded plaice, or in shepherd’s pie or with beef stew (plus vegetables). I’m not missing the pasta/noodles/rice one bit!

We're eating a lot of potatoes ... we picked up a couple of 25kg bags for under £10 each. they've been great to have!

I am going to do dauphinois potatoes (or dolphin nose potatoes as ds calls them) tomorrow, and potato salad too, as we've quite a few to use up, love spuds!

The Irish famine was serious because for a lot of people that's all they ate. One of Van Gogh's paintings is of 'The Potato Eaters'. As a kid I’m sure every main meal included spuds, and when our kids were young and money tight, cheese and potato pie was never sniffed at.

It's thanks to Mumsnet that I discovered baked potatoes as a meal, baked in the oven, halved then the inside scooped out, skins put back into oven to slightly dry out. Inside potato mashed with diced onion and cheese. Then reassembled put back in hot oven for about 20 mins and served with beans.
The other day I had leftover bolognese sauce so I added that to the scooped out potato, more cheese. It was delish.

Between 180-200 ish... depends what else is in the oven...usually for about twenty mins...I just keep checking them till they're golden and crispy. Sorry, I'm really slapdash with times and temperatures when I'm cooking!

I had to look up what a 'Hasselback' potato was... I've never had one. I must change that, they do sound nice.

I seem to rotate mash, jackets and baby potatoes and need to expand my repertoire.

The Irish peasants were the healthiest in Europe in the 19th century (well, up until the blight and political decisions led to the famine mid century) and their diet consisted predominantly of potatoes and buttermilk.

It's a much healthier carb than pasta. Lots of nutrients.

We also love potatoes in our house!! I made a simplified patatas bravas for DS (3) yesterday. Oven-roasted cubes of potatoes seasoned with herbs, covered with cheese and Dolmio sauce with courgettes chopped into it (or make your own sauce). He loved it.

If anybody is scared of excess carbs and doesn't eat potatoes for this reason, then cook them and then eat them cold - this changes the starch to a more resistant starch, which is better digested, doesn't raise your blood sugars as much and keeps you fuller for longer. This also applies to white bread : Freeze and then toast straight from the freezer!

I did proper chips yesterday..........ds is 18 and I'm ashamed to say it's the first time I've made them for him. Blush

I can't actually remember the last dinner we ate that didn't have potato in.
My dd like helping to make wedges, potato bread and gnocchi.

I got a sack of spuds from our local chippy on the day of lockdown. He had just had a delivery but decided to not stay open so sold them to villagers at cost. So due to the amount of potatoes I currently have (dried them out and have them in 4 fabric bags), we are having them all the time and I am fucking sick of them, not least because I have a tiny kitchen and keep tripping over them :o
