To feed my family potatoes for nearly every meal!!?

Now I have to say I am a fan of the humble spud.. and I'm making a lot more meals than usual.. but every meal seems to involve bloody potato!!

On top of this the kids (3 and 4) have decided they REALLY like a jacket with cheese and beans for lunch, so have been having that most days too!

Do you think it matters if most meals have spuds as the carb part? Should I make sure I mix it up or are lots of potatoes actually fine in a balanced diet?

Ooh I bloody love a really well done baked spud with salad cream and grated vintage cheddar. Am calling that tomorrow's dinner.

Also made leek and potato soup for lunch today to use up everything from last week's veg box. I think you'd have to eat a hell of a lot of potatoes before they'd do you much harm.

Before this all started I’ve always stuck them in the microwave or in a pan but having the time has meant oven baked jacket potatoes and omg the difference! We are now eating them everyday too. Yum.

God it's a day in our house!

DS had hashbrowns for breakfast.
Jacket potato and beans for lunch.
Fish Fingers and Mash for tea.

Nations were built on the back of potatoes as my Nana used to say!

I prick whole, unpeeled baking potatoes with a fork and microwave until slightly soft...let them cool a bit. Then cut into wedges. Lay on a baking tray and drizzle with oil...now here's my top secret tip! I buy a jar of chicken seasoning spice mix and dust this over the potatoes and bake until crispy.

We love potatoes and have them most nights.

Our favourite is salad potatoes par boiled and then roasted for 10-15 mins in the halogen oven.Smile

We also like mash and traditional roasties too.

Potato's are great!
I've been making Latkes.
Grate 3 potato's and one onion.
Wring it through a clean tea towel to remove excess moisture
Add 3 eggs, salt and pepper.
Fry in very hot oil.
Nom Nom nom

Yeah, they come out much nicer I've found than cooking them straight from raw in the oven.

My toddler is basically eating, eggs,meat and rice for every meal besides cereal and fruit strawberries or bananas ..or crispes 😭 would I’ll for her to eat any of those things on your list. I can sneak mushroom and spinach into omelet but can’t do anything about peas.

We're all beginning to look like potatoes we eat them so much.

I also make potato salad to have with quiche or chicken kebabs.

My kids cant get enough of potatoes at the moment. Good job I have a 25kg sack in my shed

Potatoes are our staple too OP. The common spud is very versatile. Sweet potato chips/wedges make a nice change - as does roasted root veg.

Nobody will eat rice here. Pasta is reluctantly eaten about once every 6 weeks.

I read once that potatoes are very nearly a perfect food - they just need a small amount of protein added. Somewhere in the world malnourished children were being fed mashed potato with milk added, for the protein.

Just off the top of my head, we’ve had: veggie cottage pie, fishcake/ halloumi and chips, jacket potatoes, roast potatoes with roast dinner and katsu curry made with curry sauce (Pinch of Nom- potatoes, carrots, curry powder and stock).
That’s in the last week or so. I was adventurous tonight and did egg fried rice.

This is how my childhood was. Only when I met DH I started eating pasta and rice.

DH is also a potatoe fan but I am less so, I like them as baby potatoes or roasted but not a lot otherwise. They are actually quite healthy, the dangerous bit is the gravy and oil/fat if roasted.
