Should empire biscuits have smooth or scalloped edges?

More important things going on, I know but I’m having this argument with my DP, please settle it. I mentioned I wanted to bake some empire biscuits, He told me I need a proper biscuit cutter to make them, I was just going to use a glass to cut the dough out (I’ve only ever had ones that have smooth edges). Also, glacé cherries or jelly sweeties on top?

We made some yesterday. We did half and half! We didn’t put anything on too, just icing.

I’ve never heard of an Empire biscuit but a quick google showed images of both plain circles and scalloped edges however there were an awful lot more scalloped ones so I think your husband has the moral victory here.

Most images showed glacé cherries as a topping but there were a few with jelly tots.

Also the top biscuit should be completely covered in icing. None of this putting a little in the centre nonsense.

Exactly! But I have seen such monstrosities in person. I'm still recovering from such a terrible sight.

Smooth with a lot of icing and a joob joob on top. Although a local shop uses sprinkles which are nice too.

Seems to be a consensus of smooth edges and jelly sweet, so I’m going to count it as a victory for me even though as PP have said I’ve seen a lot of google images of scalloped edges and cherries 🙃

right i love empire biscuits so i want the recipe please?!!

100g caster sugar
100g butter
1 medium egg
275g flour
1/4 teaspoon vanilla essence

Cream the butter and sugar, add in the egg, vanilla essence, then the flour and bring the dough together in one ball. Wrap it in cling film and put it in the fridge to chill for half an hour. Roll it out to the thickness of a pound coin. Then cut out the shapes and bake for 8ish minutes (these shouldn’t be brown)X then ice and decorate Smile

Sorry meant to add, oven at 170. Mine’s a fan oven and things cook a bit faster than recipes usually state, but just keep an eye on them, they shouldn’t be stuck to the tray but also not brown. I’ve never made these before but I’ve done shortbread and that’s how I tel they’re done 😂

When I make them I replace a wee bit of flour with custard powder. Makes them much nicer I think.
