Should empire biscuits have smooth or scalloped edges?

More important things going on, I know but I’m having this argument with my DP, please settle it. I mentioned I wanted to bake some empire biscuits, He told me I need a proper biscuit cutter to make them, I was just going to use a glass to cut the dough out (I’ve only ever had ones that have smooth edges). Also, glacé cherries or jelly sweeties on top?

Whenever I visit Scotland I buy pineapple tarts. I recently got some from Waitrose, they were okay but not as good as those in Scotland.

My Nana ( Glaswegian) used to stick two Royal Scot biscuits together with jam, icing over the top and three silver balls .

I vote for scalloped edges though , cherry not jelly sweet

elieza DP still calls them German biscuits. I had no idea what he was asking for when I asked him if he wanted anything from the shop.

My Northern Irish mum loves these and we still call them German biscuits. I make her some every year for her birthday. Yum!

Smooth with a jelly diamond sweet preferably but a jelly blob sweet will do.

Cherries can be okay but not in the same class as one with a diamond jelly sweet.

Scalloped. Hmmm. I'm not sure about that.

Edges can be either (I think scalloped are slightly more traditional) but it has to be a cherry!

I have never heard of empire biscuits before, and I was raised on Lees Snowballs, Tunnocks Teacakes and the Alpine skoosh lorry!

I googled these, never heard of them but one of the similar biscuits is for Viennese biscuits which I'm familiar with.
Enjoy. I'll be baking oatmeal chocolate chip cookies instead. Wink

I make Empire Biscuits, they're wonderful, but I have terrible trouble trying to get the jelly sweets for the top. Jelly Tots are wrong, it has to be the ones you get in Dolly Mixtures, so I end up buying 5 bags of these, in the hope that I get enough for 12 biscuits. I then have to eat the 5 bags of DMs minus the jellies.

They’re German biscuits where I’m from. Plain edges and a jelly sweetie. And the jam can be strawberry or raspberry but never apricot. Might make some tomorrow. I use a Hairy Bikers recipe that includes cornflour, they’re lovely and light.

NOTHING like an iced jammy dodger! Bigger for a start. Usually about the same circumference as a mug. Crumblier biscuit more like shortbread. Always raspberry jam - big NO to the poster upthread who asked if it was OK to use strawberry. Plain water icing on top, always white. Either a jelly tot or glace cherry in hte middle.

I didn't realise that pineapple tarts were Scottish too, I love them. Although not as much as the pineapple danish which is my user name... are those local to Scotland too?

According to this, the Empire or "German" biscuit is very similar to a biscuit baked in Austria. Why it became so popular in Scotland and N Ireland yet not in the rest of the UK is a bit of a mystery though.

I didn't realise they were a Scottish thing! Even though I am Scottish haha. And definitely smooth with a jelly tot on top!
