Posted here for traffic and also because I don't know where else this would go.
I've just taken over running a bakery, it's not in good shape with regard to products or aesthetics. What would you like to see in a bakery? What's your favourite product from a bakery? Would you sit in if you could?

Fancy breads (Mediterranean, chilli, etc). Savoury pies. I might sit in if it was a cosy and welcoming atmosphere and sold nice coffee Smile good luck with your new business venture, how exciting!

Rosemary and potato bread
Chilli bread
Good coffee with proper flavours
Decent croissants that aren't rubbery
No soda bread, it's vile.
A variety of teas - tea pigs do some great ones.

and yes, a nice tea room attached.

Anything home-made and not bought from Costco and fobbed off as being home-made...unlike my local...grrrrr!!

I also love a bakery with a good selection of breads and the option of sandwich fillings the staff make up freshly for you.

It depends where you're based and what the people round there tend to buy.
Savory mini pies and tarts for sure, having an area to sit and have a cuppa is nice.
Oh and do sell soda bread! Yum!

Currently everything is bought in which I'm not happy with. It doesn't need to be! Our speciality breads don't seem to sell too well unfortunately. The area it's in is very "well-to-do" and has a lot of retired or elderly people and stay at home mums. Market research is my next (one of the first really) step, usually I'd do that online but with the demographics I think that's a poor option.
@Spied we do exactly that with the bread/roll and filling option. I definitely need to make it look more attractive though as it's all in Tupperware!!
Love the idea of pies! Also have a lady who's going to home-make cakes for me instead of buying in from large suppliers, it's just not good enough quality for the customers we get. We don't even have cream cakes at the moment!!
Also, I love soda bread so I may start stocking some just so I can take it home at the end of the day Grin

I would love a bakery that delivered fresh bread and other yummy things to my house everyday. It would be great if someone could set up an online service where you could order bakery items.

A good bakery needs to have bread that is baked on the premises, not bought e.g. proper french baguettes that go hard rather than soggy.

Yes to nicely iced cakes - we love iced fingers in this family and have to get to our local bakery before they run out on a Saturday!

They do great shortbreads in all shapes too with brightly coloured icing - they’re very tasty too - the kids love them (they do a man shape in red or blue footie kit - and unicorns with edible glitter etc.)

They also do bacon & sausage butties and get lots of demand for them (they have a seperate queue for the hot section) lots of local workers / tradesmen go in for them.

There’s a lovely bakery near to me, set up a few years ago by a brother and sister
Baked in Tettenhall
They do different ‘special’ breads each day
Although they are open all day you have to go early to ensure you get the bread you want (although they do take orders too)

We had a local baker who would deliver specialty breads to order. He was baking overnight in various local restaurant ovens. He's since opened his own location and is offering baking classes and seems to be doing very well.

I would love to see the cakes that I used to see as a child - Madeleine's, custard tarts etc...I'm fed up with plastic wrapped muffins, cookies and flapjacks!

Wouldn't it be lovely to have it to delivered to your house!
We don't make bread there as we don't have the ovens, my next question to the owner is if there's funds for this! It's baked daily elsewhere and brought it but I'd love to do our own.
We have sausage and bacon baps and they fly out the door which is brilliant. The workmen love them
Thanks @Nanasueathome I'll take a look at that. We offer an ordering service and do have our regulars which is great.

In a ‘well-to-do’ area, I’d expect to see everything fresh and made on site. Pastries, sandwiches, and good tea/coffee to attract the mum crowd. Maybe afternoon tea/cream tea!

There is a cafe nearby that does a roaring trade selling freak shakes, not sure if that will suit your demographic though.

That's exactly my opinion. This area needs something special, not basic products. Unfortunately we have a few coffee shops and cafes so I'm not sure tea room is our ideal aim for now, plus we have limited space
