Posted here for traffic and also because I don't know where else this would go.
I've just taken over running a bakery, it's not in good shape with regard to products or aesthetics. What would you like to see in a bakery? What's your favourite product from a bakery? Would you sit in if you could?

Another vote for cheese scones here. Proper cheese scones with cheese running through, not just a cheese topped scone.

I like a very clean environment, nothing tatty or scruffy that suggests lack of hygiene or care.

Can you describe the locale? Who are your likely customers?

I would kill for an old fashioned bakery that isn't stupidly expensive and does the basics well. A loaf of bread that is actually baked all the way through would be nice! Where I live you either have the option of supermarket bread which is mainly appalling (floppy french sticks and doughy gloop) or posh bakeries where you can pay the best part of a fiver for an artisan loaf. It would be nice to have somewhere where you could pick up a nice loaf, rolls and maybe a little cake, custard tart or doughnut.

Our bread is lovely luckily and ranges from £1.70 to £2.25 so fairly priced I think.

Quite a few independent bakeries around here, best sellers seem to be
really good brownies, almond croissant and chocolate donuts to die for

Good sourdough, preferably with a wholemeal option.

A few vegan options (savory and sweet).

If you're serving a cafe type menu - get an egg poaching machine for eggs on toast (or avocado toast topped with eggs - bit of a cliche but still lovely).

What are you bestsellers? Have you asked your customers what they like?

Could you do some tastings at local groups - PTA/ mum and baby groups/ whatever your target market goes to and ask them to vote for their favourites?

There is a new one near us that do lots of brownies flavours. Also do boxes too. Very popular along with their homemade pies. I always think deals are good too like after school deals as when I pick my son up we often nip in one and it’s become a habit.

Everywhere I go there's a shortage of good brownies. I notice at craft fares and festivals that Brownie stalls do well.
