AIBU to think you can’t eat raw fish from Tesco as sashimi?

DH thinks it will be fine to eat it straight off the shelf.

I think that supermarket fish won’t be ‘sashimi grade’ and should be cooked.

Who is right?

Some raw fish will be infected with parasites that you may not see when you buy it. This has happened to me twice and has only become apparent when the (supermarket) fish has warmed to room temp and the parasites (worms) have become more active. I understand sushi fish is frozen first as this kills anything that may be harmful.

What do you think would be different about non-Tesco fish that would make it 'sashimi grade' ?

Freeze it first to kill the parasites.

It will then be safe.

Won't be high quality though. Especially not from Tesco.

‘sashimi grade’ is a thing @Hingeandbracket, I think it’s in the quality of the fish and the handling of it.

Isn’t sushi grade fish frozen at a much lower temp than a normal freezer? I wouldn’t eat supermarket fish uncooked, I’ve spotted a worm in supermarket fish too, really put me off fish for a long time.

No it isn’t sashimi grade, depends on your risk tolerance as to whether you’re comfortable with that. It is indeed to do with how it’s handled and whether it has been frozen at a low enough temperature for long enough to kill all parasites. Standard freezers like Tesco’s and your one at home don’t get cold enough to kill everything. If I was going to eat it, I would definitely freeze it at home first but I would honestly swerve altogether.

I used to work on one and the conditions were less than ideal...

Eww, no. When you make sushi or sashimi the fish needs to be extremely fresh, and not all fish is suitable to be eaten raw. I think that's why they use smoked salmon in supermarket sushi, because it sits around for quite a long time.

If you have a decent fishmongers near you, you might be able to buy sushi grade fish.

Morrison’s is fresher, but just ask at the supermarket. Both waitrose and Sainsbury sell sashimi.

Sashimi is also normally suitably frozen for a period before being used to kill any nasties. Off the shelf fish is NOT suitable and your DH may find himself very sick.

There are shops near us that sell sushi grade fish (japanese area of London) - I definitley wouldn’t have tesco fish raw!! You could use smoked salmon if you want.

Whoops. I've been buying normal fish for years from supermarkets -salmon/tuna - and eating it as sashimi. Never crossed my mind you couldn't.

We checked at Waitrose and they told us the fish delivery days so we only have sashimi on Thursdays!

Our local fishmongers closed and in desperation I went into Morrisons to buy raw fish for sushi - no one present at the fish counter, I found a manager wandering around who said they do not recommend that any of their fresh fish be eaten raw. None of their stock is sushi grade.

As long as the fish has been pre-frozen (most of the fish will be if it’s in supermarkets due to the duration between catching and displaying at counters) then fresh salmon and tuna should theoretically be ok to eat raw. At your own risk of course. I was told by a Japanese restaurateur that sashimi-grade isn’t actually a true grade of fish in the way that beef have grades. Sashimi restaurants simply have the first pick off the catch (pre-frozen too apparently). The kind of freezing that is performed on fishing vessels doesn’t make fish mushy, and is the ideal way of preserving freshness during the trip back.

Live fish that are swimming in restaurant tanks have to be cooked and not served raw. That’s why you don’t see live fish in sashimi restaurants, only sea urchins if anything.
