And ideally they will be healthy (ish)

January is such a difficult month for us and we are trying to budget so any suggestions would be appreciated.

bolognese with turkey/chicken mince
lasagne (heavy on the veg but with a little chicken mince)
curry
thai curries
tagine
chilli (with chicken mince)
fish pie
shepherds pie (but again with chicken mince)

We've resolved no more red meat once we've used up what's in the freezer.

Its really boring but a huge pan of mince, onions and seasoning with chopped tomatoes and pasta that is then split off into other pans. In one pan I add garlic, basil, and olive oil to be served with pasta. Into another I add peppers, kidney beans, chilli powder, and paprika for chilli. Into another is brown sugar, Worcester sauce, apple cider vinegar, and peppers to make BBQ filling for baked sloppy joes.

Batch cook a mince base and then you can use it for spag bol/shepherd pies/lasagna/tacos etc with a big salad side

I also batch cook sweet and sour/korma/thai green curry.

I make this one a lot. If I’m freezing it, I leave out the spinach and just chuck a few balls of frozen spinach in as it goes in the freezer.

I usually half the amount of meat in meat and double the veg in the above. Just as tasty / filling but healthier and better for the environment.

We tend to batch cook leftovers we collect in the freezer

Tomatoes and peppers become the base for a general red sauce and also a soup

Chicken carcass is picked clean bones made into stock, gravy big we had the giblets. Picked meat becomes pie filling or the base of a lasagne, tacos etc

All sorts of knob ends of meat end up as a chilli or cottage pie

Tomatoey pasta sauce with loads of veg. Uses up whatever veg I have in the fridge and can be turned into pasta bake, lasagne etc

Bolognese with lots of extra veg and lentils to bulk it out.

Chilli again with loads of veg & beans to make it go further.

Soups, chunky veg and lentil or scotch broth are favourites and make a decent tea

Sausage casserole with beans

Mince/shepherds pie/cottage pie

Imake a pasta sauce with lots of veg and tinned tomatoes and either blend or mash down and freeze in portions good for quick dinners but still fairly healthy.

Chicken and lentil curry.

Anything with mince. Lasagne, chilli, Bolognese sauce, meatloaf. Use turkey or quorn to Health it up a bit

Or curry made with light coconut milk/paste

I batch cook a lot, all vegetarian. Beans, lentils or chickpeas and sometimes good old Quorn bolognaise. There are some brilliant recipes on Budget Bytes (but you have to translate all the quantities!) - my favourite is Dal Nirvana, it's amazing and very easy.

This may be a bit bland for some but it's cheap, quick to do, pretty healthy and DH and I like it...

Lentil, bacon and tomato casserole. Take 1 tin chopped tomatoes, 1 tin kidney beans, 1 tin baked beans, 100 grams bacon lardons, about 150 grams lentils, 1 cup stock (I use a vegetable stock cube), 2-3 carrots or any other root veg you have wanting to be used up, 1tsp garlic powder, 1tsp paprika (possibly more!) 1tbsp tomato puree. Sometimes I've also added a chopped onion.

Mix.

I then stick the lot in the slow cooker on low for 8-9 hours but I imagine you could also put it in the oven in a casserole dish? I'm afraid I'm not completely certain on timings or temperatures for that though.

Good with crusty bread or baked potatoes. Makes 4-5 portions, which is batch cooking for us (there's only 2 of us!) and freezes well.
