Would you use soft broccoli in a soup?

Or is that really manky? Broccoli looks nice and green but is going soft, would it be ok to use in a soup?

Yes it's fine. That's what soup is for - to use up the veggies that are a bit floppy.

Yes. Any soft veg is perfect for soups.

Agree with the PPs.

However, you can also make 'bread' out of it or even a 'swiss roll' that you stuff with a filling. As long as it's green and soft then it's fine (the yellowing parts can be very bitter).

You WOULD be unreasonable to throw away soft but still green broccoli! It will be absolutely fine in soup - perfect!
I shop once a week and cook like this all the time: "Right, what needs eating tonight?" is my supper time catchphrase. I throw almost nothing away (apart from peelings etc).
