Ate some ASDA hummus yesterday! No ill effects for me or DD ... yet! Apparently incubation period is up to 3 days ... 😫

Always be careful with hummous. I once ran an event where everyone who had the hummous sandwiches was violently ill. Keep in the fridge and throw out if opened 2 days.

Why? Is there actually some sort of high-risk ingredient in hummus? Or was that just a one-off thing at your event?

Cos I keep hummus in the fridge opened for around a week and have been doing so for many years. Never been ill from it (as far as I know!)

We do as well. I think it may depend on a hummus. Ones with added veg and fruit and flavours might last much less

We had the Aldi caramelised onion one, am now thinking this was the cause of incixent when toddler was sitting on my knee as feeling unwell, then poo explosion all over me, v v grim poor thing!

Ahhhhh! DD was hoovering up hummus at DM's yesterday, projectile vomited all over car this evening. Checking brand!

It was very strange as DD (9) has only been sick maybe 4 times in her life, so generally unaffected by vomiting bugs or gone off food.

Guess Im throwing out the pots I have tomorrow just to be on the safe side.
I never know how long to keep hummus for . I rarely follow the guidelines on packets as they are usually really short amounts of time. I normally keep until it looks like the texture has changed a bit but have never been sure if this is okay. Having said that I dont think Ive ever been made sick by this method either.
I would love to make some but I cant get the texture or taste right and it definitely doesnt keep as well.

Going off at a slight tangent here, but can those who make their own tell me if it is possible to make hummus without sesame? (Or is that a bit like asking for an apple sauce recipe without apples. Confused)
I love hummus but one of my children is anaphylactic to sesame so I don't often have it. It has never occurred to me to make it myself til I read this thread. Don't know why as I make most of our food from first principles due to multiple allergies in the family.

Thank you so much @AnneLovesGilbert Yes, unfortunately all tree nuts and peanuts are also off the menu as are lentils. Fortunately other seeds and pulses have been ok so far so I will give that recipe a go.

You can make it without sesame of course! Obviously it will taste a bit different and be more of a chick-pea paté maybe than actual hummus. But it will be similar!

Most welcome. You can’t usually taste the tahini and the main ingredient is chickpeas. Best thing about making your own is you can customise and pimp it up. I like a lot of lemon juice in mine. Sometimes ground coriander. Water to replace some of the oil if I’m feeling virtuous. Save a few of the chickpeas to scatter elegantly on top on and drizzle with a bit of oil. Looks and tastes amazing. A perfect light meal with some sliced up pittas and carrot sticks.
