Now it's getting colder am building up some winter insulation Blush .....The kids love a pudding after tea most nights its tinned fruit with a blob of cream or a yogurt or maybe a ice lolly. Some nights they surprise me completely and wont have one .....anyway what cheap puddings are nice easy and good on a budget.

Tonight we got a big swiss roll and sliced it up put it in a pyrex dish or similar and poured over a tin of custard and put in the oven for 20mins or so it was so so good feed all 4 of us and was 50p for swiss roll 50p for tin of custard....

AIBU to ask for your cheap family friendly puddings.

Bread Pudding
Save all the crusts from your shop bought loaves until you have a dozen or so or buy a cheap 49p loaf from aldi preferably wholemeal
Soak all bread in a bowl of cold water overnight.
Next day tip into a strainer and pummel the water out with a potato masher
Pre heat oven to 190°
Place bread in mixing bowl and add
500gms mixed fruit
I tub of mixed spice
I tbs of self raising flour
50gms butter or flora
1tbs sugar
Mix together until all ingredients are thoroughly bound together
Turned out into greased ovenproof dish
Cook for 45 mins at 190°
When ready sprinkle a little granulated sugar over top
Can be eaten cold and is delicious still warm

Caramelised bananas - fry whole bananas in a bit of butter and brown sugar then serve with ice cream.

You can quite easily make a decent size cheesecake with a tub of Philadelphia, crushed digestives, sugar and vanilla extract, it can last you a while. Mix the philly until smooth and add sugar until sweet, add some extract until you think it’s good, crush up biscuits and lay the philly on top, add some fruit or anything if you want! 🙂

You can make "bread pudding" with pain au chocolat and custard.

Queens pudding (I think) - pastry case, jam, victoria sponge cooked on top.

My mum used to make pineapple upside down cake with a basic sponge batter, golden syrup and tinned pineapple - lush!

Try this

Put ginger snap biscuits in a dish.

Take tinned pineapple and spread on top of the ginger biscuits so it soaks in the juice.

Whip up some cream and spread on top.

It’s like a pineapple ginger cheesecake vibe! Cheap as chips

Sponge pudding is quick in the microwave and filling for hungry kids. At its most basic it's just flour, margarine or suet, sugar, milk, an egg mixed together then put into a pudding basin in which you have already put jam, syrup, lemon curd etc. Cover with cling film, pierce and cook 4 mins and serve with custard. A bigger one should last a couple of days.

My favourite it jam rolypoly cooked on a rack over water in the oven but at 2 hours cook time it's not midweek compatible!

Bread and butter pudding with apricot jam on the bread and a few dried apricots snipped up and sprinkled about before the custard goes in. We like apricots!

If you like tinned fruit anyway then the BBC Good Food chocolate pear flapjack crumble is quick, easy (just 5 ingredients) and really cheap. I even make it when we have friends over!

Bread pudding - you don't have to be exact about any of the ingredients, the cooking temperature or time;

Save all your crusts in the freezer and when you have a bowlful soak some dried fruit in a cup of tea, or prepare some fresh fruit.
Mix some milk, sugar, and egg, a dash of vanilla, a dash of spice (mixed spice, nutmeg, cloves, or cinnamon).
Add the milk to the bread, let it soak and then mash it to a stiff paste. Mix in the fruit, put it in an oven proof bowl and bake til solid.

Not cheap or child friendly but - once my uni flatmate made us chocolate angel delight with baileys instead of milk. It was fantastic!

More useufully I like cooked apples and poached pears. Lovely with a bit of lemon juice, and nutmeg.

Those cheap sponge mix packets make a nice golden syrup sponge to go with some custard Cake think the cost of the mix the syrup and custard is about £1 and you get a good sized victoria sponge from them

Per person - make a slit lengthways in the skin of a banana. Insert 3 or 4 squares of dark chocolate along the length. Wrap in foil and bake (180) for 12-15 minutes to melt the chocolate. Unwrap and use a spoon to eat from the skins. Add ice cream if you wish.

It’s quick and cheap and very popular

A brioche (1 each)
Slice in half and spread Nutella
Fold back together
Break in pieces
Put in bowl
Pour over custard
Stick in microwave for 30-50 seconds
Serve

Apparently according to ds and some of his friends it’s the best pudding ever Grin
