Chicken casserole - wrong temp? Probably.

AIBU - I'm a useless cook and get distracted with recipes when I don't have all the precise ingredients.

So I've 5 chicken breasts, (think it's 1kg), a pack of frozen carrots, one onion and 500ml of stock. I can't fit another onion into the dish.
I've stuck it in on 150 degrees (fan oven) for 2 hours?

Should that do it or should I raise the temp and reduce the cooking time?

Whole breasts from the fridge and the carrots were frozen. I'll probably poison myself!

I'd make it 180, keep it covered so it doesn't dry out, and check it after 90 mins (cut into a breast to see if it's cooked.

It's covered in a pyrex casserole dish. I'm worried because everything I cook I seem to over cook at a high temp. Should I maybe do it at a high temp for 20 mins or so and then reduce it? I'm worried as I've never used more than 3 chicken breasts in a casserole before, so I just want it all cooked.

90 minutes for chicken breasts! You could cook a whole chicken in less than that! If I'm honest OP, breasts aren't really suitable for a long, slow cook as they've got so little fat on them. 150 for two hours will ceratinly be cooked through but they'll be dry and rubbery as buggery even with liquid. In future, thighs are better (and cheaper) for that sort of treatment and breasts are best for a shorter cook at a higher heat.
