Chicken casserole - wrong temp? Probably.

AIBU - I'm a useless cook and get distracted with recipes when I don't have all the precise ingredients.

So I've 5 chicken breasts, (think it's 1kg), a pack of frozen carrots, one onion and 500ml of stock. I can't fit another onion into the dish.
I've stuck it in on 150 degrees (fan oven) for 2 hours?

Should that do it or should I raise the temp and reduce the cooking time?

Agree with tickled - breasts dry out in a casserole and will over cook. Thighs are much easier and have more flavour. But for your current meal you just need to make sure theyre cooked in the middle. I have a feeling you might be better
Taking out the chicken and carrying on cooking the veggies without it!

I once tried cooking thighs and I ended up with a fat sludge.

Why don’t you get a recipe book. I’m not being patronising. But get one with nice simple easy cook things.

Follow them to the letter - you literally cannot fuck it up.

You’re cooking the wrong meat in the wrong way. Thighs would be better, but brown them first even then they’ll only need an hour on the hob.

Have you thought about a slow cooker?

I cook them for about 20 minutes to half an hour on 200 so it seems long enough.

I would invest in a good basic cook book like Delia Smiths book. And there are loads of simple recipes online.

I cook thighs on the bone in an hour, though I use the hob, bring to the boil and reduce to a simmer. Chicken is very dry if you over cook, it's not really a meat for slow cooking - 180 degrees is low enough

I don't have a recipe book nor a slow cooker, but I used to have one called 101 easy dinners or something which was easy to follow. Will maybe invest!

If you can't cook you'd be better off with a recipe book than bunging things in the oven and guessing 😂

Yes an easy to follow recipe book sounds like a plan - if you follow the recipes things like this should be easy

You have the internet!!!! That’s free.
Take the breasts and carrot out now. Reduce the sauce a bit. Slice breasts. Put them back together
Serve with rice, as it’ll be a bit soupy

It's actually quite alright, though the carrots are a little al dente as they were sitting on the top of the whole thing, out of the liquid.

What is it that you are hoping will come out?

Chicken poached in stock?

Too late now but.
Get your chicken out the freezer night before and put in fridge.
When you want to cook.
Chop onion. Heat about a tablespoon of oil in a casserole add onion, maybe a bit of chopped garlic. Stir and keep an eye on it until it looks golden / light brown.
Cut chicken into chunks about 1 inch / 2.5 cm coves, give or take.
Toss with a couple of tablespoons of flour, pinch salt, shake pepper, herbs e.g. thyme, sage, mixed herbs.
Add to onions and oil.
Keep stirring until chicken looks whiteish.
Add stock.
A bit of pearl barley or lentils added at this point is good.
Bring to boil, chick in your carrots.
Put in pre-heated oven at 180 for 30 mins.
First instruction should probably have been to pre-heat oven...
You could add chopped celery, peppers etc with the onion, peeled chopped potatoes with the carrots to make it one pot meal
