Trying to eat vegetarian at least twice a week if not more.
I’m lacking inspiration though!

Matters are complicated by a gluten free DH so easy things like pasta are out.

My favourite so far is vegetarian chilli with roasted sweet potato.

Please help!

Ooh I just made a belter! Toulouse sausage stew with veggie sausages. It HAS to be cauldron sausages as texture of Linda MC ones not right and Quorn ones don’t have the right taste for the dish!
Cook in oven separately. Fry finely chopped onion, add garlic, carrots and courgette. Then canellini beans - add stock and water to just cover, not too much. Chuck in a handful of risotto rice to thicken instead of flour and then add chopped sausages once over cooked. Let simmer for a bit and serve with whatever your DH can eat as a side dish 😊

Jamie oliver’s Sweet potato and chickpea curry. Even DC love it.

Roasted veg with halloumi - roasted or griddled.

All my soups are veggie - not sure if that really counts as a meal but it’s delicious with good bread and butter. Any veg and bulked out with lentils or beans.

Risottos are easily veggie, and baked risottos don’t need to be looked after - revelation!

Thank you 😊 are the cauldron sausages meat substitute? I should probably have said no quorn/ meat substitutes as I’m not a big fan.
Love cauldron falafel though.

That might be the same one I make, it’s AMAZING. I cook paratha to have with it and loads of Greek yoghurt and fresh avocado. It’s my favourite dish.

We like the Bosh spicy tofu (press the tofu dry, coat in cornflour, fry on all sides, then make the sauce which is orange juice, a squeezed lemon, sweet chilli sauce, sriracha sauce and soy sauce. )

Tonight we had cauliflower cheese and a crusty cheese bloomer loaf from tesco, and I made pasta bakes ready for tomorrow.

Yesterday I made mushroom stroganoff using blended cashews instead of cream/milk.

Yep the Cauldron sausages are meat subs, they’re honestly really nice though, much better than others however if you’re avoiding meat subs for environmental reasons etc could use a packet of cooked chestnuts instead, they would add body and hold their shape in the dish

1 long pointed red pepper per person, cut in half lengthways. Deseed and cut cherry tomatoes in half and put inside the peppers. Then scatter 1 tsp of capers over each half pepper. Drizzle peppers in olive oil and roast for 20 mins at 200c. After about 10 mins slice a pack of halloumi into about 10 slices and fry these in olive oil. Serve peppers and halloumi on a bed of rocket.

Have you got a really good Dahl recipe? I’d recommend the Prashad Dahl recipe as my go to one!

Mushroom stroganoff sounds amazing!

Also a big fan of halloumi, that pepper recipe sounds great.

Definitely a dhal

I bite in food processor a whole chopped BNS along with onion garlic and ginger
Then put in pan with spices (can use a patak style paste if you prefer) and yellow split peas and red lentils and stock and simmer for ages

Can stir through chopped spinach
Or as coconut milk to the stock

Lasts for days and great for easy lunch

Courgette layered with cram cheese and Parmesan and topped with breadcrumbs and baked.

Big rice salad- cook mix of rice like black, red and basmati etc. Cool and add what you like all chopped up- olives, jar artichoke hearts, peppers (can use the soft ones in oil), tuna, any veg or salad. Use a dressing or just lemon and herbs or even salad cream.
Bloody lovely.

  • risotto (green veg, tomato or mushroom)
  • tofu in peanut sauce with rice
  • hummus, homemade (yes, they have to be homemade in our house as we all hate the prepared ones) wedges and cut up veg
  • veg and chickpea curry with rice or Bombay potatoes
  • breakfast for dinner (scrambled eggs, breakfast potatoes and hot sauce)
  • pizza (choose own toppings)
  • broccoli quiche
  • tapas (tortilla, patatas bravas, olives, cheese, roast peppers)
  • halloumi salad

Gluten free I think. Very time consuming to make and bake though. If you want to eat by 7.30pm, start around 4 or 5pm. Grin But it is worth it, honestly.

Potato and spinach curry (or whichever greens you have in house).

Blend onion, garlic and ginger with oil. Fry until soft/cooked. Add curry powder (or crushed spices if you like). Then add veg - big chunks of potato, shredded greens - and a couple chopped tomatoes - you can add any other veg you like. Add stock and cook down. It’s a very loose recipe adapted to whatever I have in/needs using. Serve with yoghurt/cucumber and mango chutney.

We have also been spiralizing courgette/carrot and gently cook in pan with some butter. Serve with a ‘pasta’ sauce - goes well with a few chopped tomatoes gently cooked with garlic, chopped capers and parsley.

You need ‘The Green Roasting Tin’ recipe book. I am actually in love with it. Not a duff recipe so far, and so easy! Fab for throwing the ingredients into the tin and then it cooks away while I put the DC to bed.

This doesn’t apply to the OP because she’s not vegetarian but in case anyone on here is, Gruyère isn’t suitable for vegetarians as it contains animal rennet.

All of these are vegan and gluten free, and quick / easy:

Sweet potato and black bean chilli

Chickpea and coconut milk curry

Oyster mushroom stir fry with a homemade satay style sauce

Lentil Bolognese (we use GF pasta and it's pretty good IMO)

Quinoa with avocado, roast coquina squash, pomegranate seeds and an almond butter dressing (Deliciously Ella one I think)

Roast cauliflower with puy lentils (the tomatoey packet ones are good if you're in a rush), sun dried tomatoes, and loads of salad

Thai green veg curry with sticky rice

Sweet potato falafel, with slaw, hummus and salads (easy Leon recipe using gram flour)
