Trying to eat vegetarian at least twice a week if not more.
I’m lacking inspiration though!

Matters are complicated by a gluten free DH so easy things like pasta are out.

My favourite so far is vegetarian chilli with roasted sweet potato.

Please help!

Research Deliciously Ella’s books: her recipes are vegan, gluten free and no processed sugar, but a big hit with my four kids. They’re generally very easy to make and freeze well, so I usually do a double batch.

Ratatouille and jacket potato,
Satay curry/gf noodles
Lentil Shepard’s pie
Veggie burgers (I make mine out of fried carrot and onions, mashed chickpeas and some flour, few sprinkles of paprika and chili but can use anything)
Bean chili
Pretty much any curry can be made veggie
Egg and chips
Omelettes

They have loads of recipes they are actually vegan and loads of their stuff is also gluten free. They are annoying as hell to watch though on their you tube vids but may give you some inspiration

I made a delicious veggie dinner by accident last night. Gluten free potato gnocchi baked in a sauce of onions, garlic, mixed peppers, tomatoes and passata with fresh chopped basil, mascarpone and mozzarella.

Also like coconut and peanut vegetable curry with spinach, ginger, red peppers, baby corns and sugar snap peas.

I added veggie mince from The Meatless Farm which really added to the texture. The mince from The Meatless Farm is far nicer than other brands

Tofu tacos! Most Mexican food can be made veggy with low effort and the spices are so tasty. Also you can use corn tortillas so that's gluten free

Ohhh there's lots of good recipes on Deliciously Ella website and BBC Good food, current favourites here are the chargrilled veg and halloumi quinoa salad and the black bean and sweet pot spicy stew.
Also salad leaves, with orzo, roast walnuts, cubes of feta and vinagarette is a yummy lunch.

One of our favourites is egg and lentil curry. It's really easy to make and delicious. It's a Delia Smith recipe.

Other meals we eat are: Sweet potato and black bean chilli, black bean burgers, chickpea and spinach curry, spicy chickpea pasties, shakshuka, egg and chips, lentil bolognaise, spinach and walnut lasagne, veggie shepherds pie with loads of different veg and lentils topped with ordinary potato and sweet potato

And this is amazing - it's a burnt aubergine chilli and somehow the aubergine tastes really meaty and delicious, truly delicious. I do it one night as chilli and rice with wraps burrito style then the next night put it on tortilla chips with cheese in top and oven bake for nachos. Amazing :)

Google Anna Jones Dhal it is unbelievable.

In fact I'd recommend buying one of Anna Jones books, her recipes are fantastic, easy and super tasty. I like her Frittas, her Boston Beans and her filo pie.

This if my favourite veggie chilli recipe. Great with sweet potato wedges and it makes a huge pot full so great for batch cooking.

We eat a GF pasta (DH is gluten intolerant) and you can't really taste the difference. The only one i find tricky is lasagne sheets but pasta bakes work well.

Other than we eat mushroom risotto, lots of curry or dhal with rice and stir fried veg with rice noodles. Tried gnocchi but the kids aren't too keen.

I've made this vegan shepherds pie a few times and again it make a big amount so i make one to eat straight away and one for the freezer..

I would up the sauce and salad ratio and serve with leaves as it is pretty carb heavy but oh my word it is a delight.

We've had the following recipe weekly for the last month since I discovered it - it's amazing. I serve it with little roast potatoes done with garlic and rosemary. Definitely give it a go:

Loving some of these recipes!!

My favourite is a pasta dish but so easy & delicious it may be worth trying with GF pasta.

Soften onions & garlic
Add chopped lots of chopped courgette (1per person)
Add a pinch of dried chilli flakes & season
Slow fry for 10m
Stir through spaghetti with a drizzle of olive oil and sprinkle with loads of Parmesan.

So easy but so tasty!

I buy Cauldron sausages but they need a lot of chewing to get them down. I also buy Heck beetroot sausages. Beetroot burgers and various other types, pumpkin and sweet potato are good.

We have gluten free pasta in the house. Also pea pasta, lentil pasta and black bean spaghetti.
