To use only eggs to make omelettes?

I don't mean fillings but ingredients to make the actual omelette.

I just use eggs.

DD says her Dad puts water in the mix, prior to cooking. Also, Grandma uses milk?

I've never heard this, anyone else? Am I just some kind of a freak?

I (smile smugly) can not do many many things but I make an amesone omelettes. My own chicken eggs-8-12 of them. Tiny splash of full fat milk. 1/2 spoon of Coleman’s mustard. Sprinkle of salt and pepper and mixed herbs - and a load of grated cheese. I fry onion / tomatoes / mushrooms or none and then pour in the mix. Cook from bottom and alternate with a grill top and then swap - cut in wedges and there is silence in the kitchen. When people come and stay the request is always omelettes - whereas for us it is a great use up when our girls go mad and starting laying 1 each day and we end up sign 10 a day.

Eggs, salt and pepper. Apparently if you add liquid, it does something unhelpful - egg yolk, egg white have similar cooking temperatures, whereas milk/water needs to reach a higher temperature to evaporate, so the eggs will likely go rubbery from overcooking, or they'll be soggy.

I use a splash of water after seeing Jamie Oliver do it. He said it made the texture silkier (and should be cooked in lots of butter).

I only make them for DH and don't usually have them myself so I don't actually know if it's true!

I add a splash of milk because I think it makes the omelette a bit fluffier, plus seasoning.

I know people who put a bit of milk in, but I prefer an omelette without milk. Personal taste I think.

I add a splash of water and salt and pepper. It seems to make the eggs spread further over the other ingredients so it all gets covered. Today's lunch was an omelette made with a heaped (to almost overflowing) pan of mustard greens, cooked down, and a couple of tomatoes, then some cheese on top.

If I’m making a classic/French style omelette it’s just eggs, but if I’m making a Chinese style one I add a tbsp of water to the mix. It’s also the best way to make a fake McDonald’s folded egg for an egg and cheese muffin.

Milk gets perilously close to scrambled eggs.

I have heard it said that a dash of carbonated water will make the omelette fluffier, but I just use the eggs.

A splash of water seems to make an omelette fuller and more fluffy. I always do this,and add dill weed or mixed herbs.

Splash of milk, salt & pepper, never had them stick / burn / go rubbery... and they only turn scrambled if you stir them repeatedly!

I would,never add milk or water to scrambled eggs but I think a splash in an omelette mix might make it lighter. I’m going to give it a try.

If your eggs are turning out badly, it's probably because you're adding the salt too early or too late. Should be around 15 mins before cooking.

If you add a tiny bit of plain yoghurt, or even just the whey from the yoghurt, it stops the omelette sticking.

I put milk in. DH used to cook himself eggs every morning, and one day I made the mic for him because he was running late, and out a bit of milk in. He started doing it all the time afterwards because he said the mixture stuck the pan less with milk in.

You really don’t get scrambled eggs if you add milk, unless you mix it up in the pan! I’ve used milk since I was little, as did my mum and my gran, and my omelettes are always omelette like. I do it because I like it better that way, not because I think I “need to”.
