I think you need to figure out what type of Brownies you like fudgy or cakey? Neither is right or wrong but people usually have a strong preference!

Humming Bird recipe is THE BEST EVER.

I’ve had people tell me I should go into business selling them 😂

I haven’t tasted a better brownie at any bakery/restaurant since I started making these at home.

Don’t skimp on quality of the chocolate or butter.

The hummingbird recipe I substitute half the flour for coco power add 50 grams of chopped walnuts and 100g of white and dark chocolate chunks and an extra egg yolk. Peoples biggest mistake making brownies is over baking them there should be a wobble in the mix when they are baked then overnight in the fridge firms them up.

Haven’t RTFT but re overbaking, get them out of the oven and into a tray of iced water - stops them baking. I use the Guardian ‘perfect brownies’ recipe and do the whole thing in the Magimix. It’s an excellent recipe.

Well. I made the good food ones. I think they’re ok but must have done something wrong as the top crunchy bit was v crunchy. And I only gave them 30 minutes and they were white solid.
The recipients loved them so that’s good but I’m still going to try a couple of other recipes. I didn’t have a square tin either. Maybe the tin was too shallow. Pondering ...

I made the BBC ones just this week. They were great, although they needed more like 45 minutes in the oven.
