I made the Nigella baileys tiramisu for a change. It was lush and even better a day later. Yum

The bbc recipe seems complicated but actually it’s just ludicrously detailed. It actually explains how to chop chocolate, which feels unnecessary...

My dc don’t like white chocolate so I just don’t bother on the good food recipe :)

Key is whipping eggs and sugar until giant - is try it with the gf flour too. Worth a shot!

I don't use "good" dark chocolate but for the chunks I use Cadbury and Milky Way. Also don't have an electric whisk so mix the eggs and sugar by hand and they always turn out great.

KooMoo I always make the Nigella flourless/gluten free brownies - if you google it it’s right there at the top. They use ground almonds instead of flour.
Make absolutely sure to line tin with that nonstick paper and chill thoroughly before attempting to remove from pan. I do mind in a cupcake tin - square holes - and people go crazy for them

Mary Berry’s recipe is amazing. The coffee (I use a shot of espresso, not spoonfuls of instant) gives it an extra decadence! Also I use butter not marg. @KooMoo it works really well with GF flour.

Brownies, made properly, should always have a flakey top because it should be made with real chocolate (not coco powder) which rises to the top whilst baking and flakes on cooling. They should also be moist but not stodgy.

I use the BBC one, I often make this with Lidl chocolate. The secret is to whisk the eggs and sugar for the time stated.

I use an 8" square tin, leave to set, cut it into 4 strips and then each strip into 6 if you are serving with ice cream.

Roulade is made without flour, I recommend MARY BERRY'S CHOCOLATE ROULADE-

CakeMake sure you have an electric whisk.
CakeTurn The baked roulade out onto fresh baking paper once it's cooled/ when spreading the cream.
CakeBrace the roulade against a wall when performing the roll (stops it running away from you and keeps the roll tight) and slowly peel the paper off as you roll.
Cake I recommend adding a tiny bit of icing sugar to the cream.
CakeDust with icing sugar when complete, so pretty Grin

This is the best gluten free/dairy free - if you use marg. It's fudgy-cakey with a crisp crunchy topping, I use Dove gluten free, I add the choc chips and the nuts in ground form.

In terms of gluten recipes - Jamie Oliver's was the best. Don't scrimp on the dark chocolate!
