Is this usual with baked potatoes?

DC went to MIL's and had the most amazing baked potatoes and not they want them the same.

It's a right faff. First potatoes need baked then you scoop put the potato and mash it. (at the same time you put the skins back in the oven to crisp them). You mask it with butter and cheese and then take the skins out and scoop it back in...and then grate cheese on top and bake it again.

I am so fed up doing this and it is all they want to eat now. Argh. Do others do this for baked potatoes also as DH says they have always had them like this.

My mum used to make these for me when i was a child,
I loved them, happy memories!
Normal baked potatoes are nice too though.

If you make the mash very smooth and then add beaten egg to the cheesey mix, when you put it back in the oven it rises: soufflé potatoes. Even more delish!
but definitely not twice a week!

I call these twice baked potatoes. In my mind they are different to ordinary baked potatoes. They freeze really well before the second bake so I like to make a huge batch and chuck them in the freezer. We also usually have half a potato each with some salad or other veg
That said, we have not had them for ages because all the potatoes in the shops have been so small this year, and it's only worth it if you have big potatoes.

You can do a large batch of these and freeze them, I do, particularly in the summer and they go well with a bbq!

I microwave my baked potatoes for 5 minutes and in the meantime the oven has heated up so that I can bung them in for another 5 minutes and crisp the skins up.

Do they taste as good as baked potatoes done just in the oven, when you do them that way, @peeree? If they do, it would add another option for an easy lunch when it's just me at home (I can't justify having the oven on for an hour or more, just so I can have a baked potato - it's a reverse L'Oreal thing - I'm not worth it - lol).

They are a faff but So worth it. I call them soufflé potatoes. Extra good with a beaten egg and some chopped bacon.
