I know I'm being finicky but it's phobia related, so I have an excuse for being irrational.

DH has just had a go at cooking SW curry loaf, and it looks and smells fab...but I'm feeling anxious about the rice element, and how to cool and store it safely!

It came out of the oven and has been sitting in it's tin for about 20 minutes. What do I do with it next - slice it, wrap it foil and put it in the fridge right now? We don't necessarily want to eat it instantly and it looks like most people eat it cold, but I know you need to cool rice v quickly...

Bump. I've wrapped it but it's still too hot to put in the fridge, please can someone reassure me as to how to deal with it!

Rice scares the shit out of me, I usually avoid eating it at all.

Put it into a bowl then immerse the bowl in some cold water.

Don't wrap it until it is cool - you are sealing in the heat!

I'd remove it from the hot tin (ideally as soon as it's out of the oven), divide into portions and leave in a shallow dish to cool, then put in the fridge. The advice is not to leave it out for over an hour.

Will it reassure you OP if I tell you that I've eaten rice that's sat at room temperature overnight at least once a week for the last couple of decades and it has never made me ill?

But if it's the SW curry loaf that involves a can of chick pea dhal, I do want to get around to making that. I already have the can of dhal, that I bought in about 2007.

Oh great ok...I better go unwrap it and slice it then, duh. In ten minutes it will have been out of the oven for an hour

It is that one Barbara, it is awesome. I don't even like chick peas, but I gotta lose me some weight. Maybe shitting my arse off for 72 hours will help with that...

Not sure what an SW curry loaf is but basic principle is to divide it into smaller portions so it’ll cool quicker, and not leave it out of a fridge or freezer for longer than 1-2hours. So yes probably if it’s very dense and cooling only slowly, slice it, separate the slices from each other in some way e.g. laying flat in a large Tupperware/ on a plate covered in foil - you may want to overlap the slices if they’re likely to dry out, then leave for the rest of the hour. Or as pp suggests place in a container and put container in ice water.
It can go in the fridge when it’s not completely cool- if you’re still worried it seems a bit warm when you need to put it in the fridge/ freezer, just turn the temperature on the fridge down a bit lower e.g 2degreesC for a while

When did this eating rice reheated business suddenly be come an ishoo? I've only ever read it on thsi forum, absolutely no one have ever become ill in my RL from reheated rice. all the takeaways over the years, casually slung on the side an reheated 15 hours later

I have sliced it thickly and spread the pieces out on a plate to cool a bit more. I'll give them 10 mins then they're going in the fridge, dead or alive...DH keeps watching me walk back and forth between computer and kitchen with a bemused expression, but he knows I'm just stressing about the rice.

It's highly likely that I'll find myself unable to eat it ultimately. I'm stupidly emetophobic. Lucky I tried some while it was piping hot, it was lovely.

I never worried too much until a friend got very ill from poorly reheated rice - and that was way before I joined MN. Ever since then I don't think I've eaten it at all.

But that's just me, most people have more ordered thinking!

As if I wasn't paranoid enough, I've just seen the chickpea question from last night. Bloody hell, I'm going back to dry crackers, they're safer.

That and cake and chocolate. Which is why I have 4 stone to lose.

I have never had a problem with rice.

I happily use left over rice from the day before ( kept in fridge) I even freeze left over rice and use it weeks later.
Many recipes call for day old rice.

I don't worry about rice, in fact I don't worry too much about germs, as long as basic hygiene is observed it's fine.

Oh it's definitely doable to poison yourself with rice that's been cooked. I made a cake like this before and like a complete moron didn't bother fridging it. Been there done that and it's fucking horrendous.

Right, I've sliced it, cooled it a bit more so it's simply warmish, re-wrapped in foil and put in fridge. It was out of the oven for about an hour and a quarter before going in the fridge.

That's ok isn't it, we just eat it cold?

Bloody hell, I wish I didn't care.

Curry loaf is not exactly sophisticated cuisine, but it is low cal and certainly very nice. I wish it didn't inspire such panic in me, I'll just have to eat it straight from the oven...

I'm pretty sure you can leave rice to cool for up to 2 hours before refrigerating with no issues.

At this time of year if I want to cool things quickly before putting them in the fridge I bung them outside in the garden - suitably covered/wrapped/with a lid on of course!

I'm another person who merrily reheats rice from the Chinese take away for lunch the next day - in fact, we deliberately order enough for left-overs! It's thoroughly reheated in the microwave, and we've never had a problem - I'm over my half century and still fighting fit at any rate! I think as long as food is piping hot all the way through you're ok. Tepid temperatures are always the problem, both when storing and warming up previously-cooked foods.

I'm pretty sure loads of Japanese kids (and adults) take (often reheated) rice to school/work in their packed lunch every single day. Doesn't seem to do them any harm even when it's sat around all morning.

I eat reheated rice all the time and I am still alive. In fact I order extra when we get Indian food just so I can reheat it the next day for my lunch

Me too. Well maybe not once a week but fairly regularly. Never had a problem

Rice is associated with a bizarrely high number of food poisoning cases, so it's not nonsense. However, most of those cases are to do with takeaway and buffet restaurants where rice is kept warm for a long period of time.

The problem with reheating is that the particular bacteria involved can survive at the temperatures you'd normally reheat it to. At home, it's perfectly safe to let rice cool, keep it in the fridge or freezer, then reheat it once. Don't keep reheating the same rice, eating some, then putting the rest back to cool and reheat again. But also there's no need to be paranoid about it.

Thank you Bridget, that is very sensible. I get so anxious about it, I know its stupid but like I said, it's a phobia of sickness so not always rational!
