About Slimming World curry loaf?

I know I'm being finicky but it's phobia related, so I have an excuse for being irrational.

DH has just had a go at cooking SW curry loaf, and it looks and smells fab...but I'm feeling anxious about the rice element, and how to cool and store it safely!

It came out of the oven and has been sitting in it's tin for about 20 minutes. What do I do with it next - slice it, wrap it foil and put it in the fridge right now? We don't necessarily want to eat it instantly and it looks like most people eat it cold, but I know you need to cool rice v quickly...

I often reheat takeaways ( including rice) the next day.
I guess that ice has possibly been reheated a couple of times.

I don't get ill.

It is NOT reheating the rice that causes food poisoning. There is a toxin in rice that cannot be killed by temperature. The danger comes from cooked rice not being cooled fast enough, because once the toxin iactivates - you cannot kill it by reheating. Ideally it should be in the fridge within 20 minutes (if you have leftover rice, rinse in cold water as soon as cooked then put straight into fridge. I realise you can't do that with curry loaf, which I would slice and refrigerate ASAP)

I think you’d have been better letting it cool on the counter and fridging when cold rather than wrapping it and then fridging.. that’s a recipe for germs to breed and multiply

Yes, I understand about toxins not being destroyed by heat ( I have a science degree) and that's what makes you ill, but I take a more evidence based approach to life.

I have been eating left over rice ( often kept at room temperature ) for years ( I'm in my 50s) and never been ill.
So I will keep doing it.

I was really sick off rice. Like, the pains were as bad as 5cms dilated bad

In India, cooked rice is left out at room temperature all day and heated up when eaten, no issues at all. Don't worry.

That's not strictly true either.

In theory it's the length of time that the rice spends at ambient temperature, which is the optimum temperature to allow bugs to flourish.

"How" it's cooled doesn't matter, as long as it's done quickly.

In practice I don't bother .

Rice can be contaminated by bacteria that forms spores - which means that the usually methods of killing it don't work (e.g. heating to high temperatures) The chances are your rice hasn't been contaminated with this particular bacteria and it's why there are so many people who can merrily eat cold/reheated rice with no issues.
Even if it does have the bacteria you would still need to cosume large numbers of it to become ill. It takes time for bacteria to multiply and it needs to be in the 'danger zone' - which is why you need to cool/reheat quickly.
Assuming you are not a high risk individual (where food poisoning could be very serious) then I would eat you curry loaf and not worry!

Thanks Njcr and Speakout. I do love the science, it often calms my anxiety.

So to recap - odd loaf concoction (freshly cooked rice, beaten eggs and tinned chickpea/lentil dahl) came out of the oven and remained in tin for 25 mins. I removed it from the tin, wrapped it in foil, and left it for about 20 mins until I thought better of it and unwrapped it, sliced it and separated the pieces to cool on a plate for about 20 mins. Then I re-wrapped it, warm, and put it in the fridge.

Is that a guaranteed vomit and shit fest? I am not immunocompromised, elderly or under 5, but it's not death I fear - just throwing up. And others throwing up, so I would have to avoid DH eating it as well.

I wouldn't bother with it op, personally. I was awake half the night in fucking agony off reheated rice, not worth it tbh.

I am also a scientist so have come to the conclusion from my own personal observations, that the risk of something bad happening due to eating 'incorrectly' stored/reheated rice is very very low, having never happened to me or DP in of thousands of 'experiments'.

I also put slightly warm food in the fridge, as it doesn't seem to affect the fridge temperature, eat out of date food, keep butter at room temperature, never wait for the oven to heat up, and generally break every piece of food safety advice going and I have had food poisoning once in the last 30 years and that was almost certainly from a prepacked prawn sandwich from the work canteen.

Incidentally, there is no plan to reheat it - just to eat it from cold.

DH just knocked up another SW recipe, Cajun dirty rice. It was delicious, but fuck me eating healthy food makes me bloody anxious. I'm craving the safety of what I know, I cant handle all this rice.

I have had food poisoning once in my adult life- and that was from restaurant food.

You know, most rice in restaurants is heated up, because they really can't cook each portion at the time.
I've eating egg fried rice left out for like 12 hours... Was fine. But I am kind of an invincible rubbish bin...

There's a traffic junction near my house, very light traffic, usually just one massive speeding lorry a day or so, you can never tell when it's going to come by. Anyhoo, I just sail across this junction without looking. I've even done it with my eyes closed, and it's been fine! So I think everyone should start doing it. There's a lot of hysteria about massive speeding lorries, these days.
