Seeking inspiration.....so sick of menu planning and trying to think of meals that aren’t always variations of the same old thing

InternetRandomer · 24/01/2019 20:45

@yearinyearout it may well have been you so thank you SmileFlowers

nicoala1 · 24/01/2019 20:46

When I am stuck like this I have a look at the menus in restaurants (online of course), and take inspiration from them! Veggie restaurants are great for unusual ideas. Then I look up the recipe quoting the dish, or the main ingredients.

Passes an hour too!

Ramen. It’s so delicious, filling and warming on a cold winters night and so easy to make. There are so many different ways to make it too.
I cheat and use instant miso, a bit of garlic, soy sauce and a sprinkle of sugar for my soup base. Then just add noodles, any veg or meat you want and done,

M0reGinPlease · 24/01/2019 21:01

Shakshuka is my new great love: spicy tomatoes and peppers with eggs baked in the sauce. It is so comforting and tasty and perfect for cold winter evenings.

God I love this! I add chorizo and canellini beans too and serve with sour cream and crusty bread.

Watching this thread with interest as I'm in a bit of a good rut too. I made the effort to do salmon tonight though which was really nice with some garlic roast pots and sugar snap peas.

LutherLover · 24/01/2019 21:03

OH made chicken and leek cottage pie the other night. It was absolutely delicious!

M0reGinPlease · 24/01/2019 21:04

Food rut not good rut!!

Nacreous · 24/01/2019 21:08

Risotto: butternut squash, leek, mushroom.

Paella with chicken and chorizo.

Chorizo and buttercream casserole.

Cherry tomato, caper and balsamic sauce for pasta or meat (Jamie recipe)

Warm butternut squash salad with Parma ham, parmesan and pine nuts.

Lamb ragu for pasta.

I eat a lot of fish which isn't helping this list!

ScarlettDarling · 24/01/2019 21:17

Oysterbabe I love the sound of the chicken and broccoli stuffed pasta shells. Think it would be nice with spinach instead of broccoli too.

Some newish additions to our repertoire are Mexican chicken stew, curried chicken and new potato tray back and Chinese chicken curry, all from the BBC goodfood site.

pasanda · 24/01/2019 21:17

So many great ideas! I'm a shit cook so I'm place marking for inspiration

FortyFacedFuckers · 24/01/2019 21:30

Also love goats cheese & spinach stuffed chicken breasts.

Recipe box. Gousto and hellofresh both have offers for newbies. Just make sure you cancel your account after so you don't get charged at full price.

SummerInSun · 24/01/2019 22:05

All seems pretty traditionally English. Why not mix it up a bit with some other cuisines? Indian or Thai curry (some good beginner recipients in Jamie Oliver’s Ministry of Food). Or some Mexican other than chilli - enchiladas, fajitas (start with El Paso and work up from there). Or stir frys with lots of vegetable.

Unbelievable18 · 24/01/2019 22:07

We had smoked haddock kedgeree tonight which was so easy and delicious. Tomorrow night will be chicken and red pepper tortillas.

Also this week, roast chicken with roast celeriac and roast potatoes - celeriac was amazing!

This weekend I am going to make a chickpea and butternut squash tagine with couscous.

Purplejay · 24/01/2019 22:13

These are some of my staples.
Mushroom or squash Risotto
Curry (veg, lentil, chickpea, Thai green) Dahl etc) with rice/cops/bread
Sir fry veg with curry sauce or other (hoisin, chow mien, sweet and sour, sweet chilli). Serve with rice or noodles.
Cooked breakfast/fry up
Gravy dinner with mash and 3+ veg, add roast veg and Yorkshires (no meat)
Omelette
Burrito (bit like fajita but involving beans and rice)
Salad with potato salad. Add chicken/veggie nuggets/deli slices/cheese/pickle/beans whatever you like.
Homemade soup and bread
Pasta with tomato based sauce. All mine have onion and garlic, mushrooms, stick and balsamic. Add veg, beans, mince, olives, pesto, wine, herbs as you fancy.
Pasta with cream sauce. Fry onion, garlic, mushrooms, then add other veg (courgette, peas, peppers, tomatoes), pesto, salt and pepper and single or alpro cream and fresh herbs, cheese or a splash of white wine if you like.

Stock not stick!

Another vote for Hello Fresh. Get a discount as a new customer. Blooming expensive otherwise but can cancel anytime. Trying feast box at present but don’t like them as much.

happinessismyliberty · 24/01/2019 22:20

Current easy tea in this house is gnocchi.

Fry some pancetta, add tin of tomatoes, garlic and mixed herbs. Put gnocchi in salted boiling water and simmer for about 5 mins, then mix with the sauce. Put it all in a casserole dish and cover with mozzarella then put under the grill till it’s all melted and bubbly, we have it with garlic bread.

Homemade nuggets are another favourite, chop chicken breasts into strips and coat in egg, mix breadcrumbs, garlic granules and Italian herbs together then fully coat the egg coated chicken in the breadcrumb mix. Put the chicken in fridge for hour or so to set then lightly fry in olive oil, we normally have it with rice (smiley faces if I’m feeling generous to the DC!)

happinessismyliberty · 24/01/2019 22:24

As you can probably tell none of my recipes ever taste the same, I jst chuck things inGrin DH takes the piss that my spag Bol has never tasted the same twice and that you can’t like a meal I’ve made because you’ll never get the sane again

bonfireheart · 24/01/2019 22:40

Felt the same as you. Tried to Gousto box, it was great but too much for one person even when eaten over two days! I've got the simplycook box now which is just spices and sauces. Haven't tried any of the recipes yet, but the box is good for six months. I'm hoping to make the chicken katsu curry tomorrow and cuban prawn pasta at the weekend.

Muffster · 24/01/2019 22:50

Basic tomato and onion sauce, add tin of chickpeas, lentils or similar, plus any other veg kicking about eg: leftover grilled pepper, dash of Tabasco and pinch of Italian herbs, and chopped up grilled sausages currently going down well. Elevates to fab with additional blob of sour cream and mustard.
