To ask how to use up surplus milk?

NC as I am also asking everyone I know round for a cuppa to try and use a bit up, so it's v outing

We get milk delivered by the milkman. I made a mistake and accidentally set my Christmas order to arrive TODAY (I was confused when it didn't arrive at xmas but I find the ordering system difficult so presumed I hadn't confirmed the order etc).

We get two pints of milk a week between two adults. I was just delivered 10 pints (we had lots of guests over xmas). We aren't milk drinkers, particularly - just use it in coffee/tea and the occasional splash in porridge... no idea what to do with it. There's no way we will use it all before it goes off if we don't get a good suggestion and I hate food waste.

Any ideas? I thought about making cheese sauce and freezing it, but don't know how well it will work/there's only so much I can make...

You can freeze it in the bottles if you have room.

Rice pudding?

Paneer? (That you can also then freeze).

Cheese sauce freezes well. Full fat milk will freeze OK but not semi nor fat free.

White or béchamel sauce freezes well (can flavour as appropriate when needed).

You can freeze semi or skimmed milk. Just needs a good shake once defrosted.

You can make cheese sauce with skimmed or semi skimmed milk, but you really need whole milk for custard and rice pudding etc. So I would just freeze the milk if skimmed or semi skimmed.

If whole milk, how about ice cream?

If you freeze milk as is it goes all lumpy. Not off. But you wouldn't want it in your cuppa!

If you don't want to freeze the milk itself, these things use up milk:

Crepes (cook from frozen in a hot frying pan - this is a brilliant recipe: www.annabelkarmel.com/recipes/babys-first-pancakes/)

Pancakes (cook straight from frozen in the toaster)

Macaroni cheese

Ricotta, which you can then put on toast with honey and figs, or use to make more pancakes, or filled pasta (www.thekitchn.com/how-to-make-homemade-ricotta-cheese-cooking-lessons-from-the-kitchn-23326)

You lot are amazing! I knew you'd be better than google. It's 8 pints of whole milk and 2 pints of semi, 2 more whole milk on Monday.

I have to give 5 days notice of cancelling an order.

I only have two neighbouring houses here, one of which also got a milk delivery today, but I will ask the other.

Great idea re. Just making a white sauce to flavour when needed too!

And crepes pancakes will be made too thank you! I am not particularly skilled in the kitchen so attempting to make custard will probably go horribly wrong..

Have a bath in it.

I had this problem a few weeks ago as I messed up my order. I put the milk on freecycle - offering it to anyone who needed it. A young couple from up the road came and took 4 bottles.

There will be people in your area who are short of money this January and a few bottles of whole milk will literally feed children.

If any of it does go off, use it to make scones - ad a 1/2 tsp of bicarb of soda, the lactic acid in the milk reacts with it releasing bubbles, and the resulting scones are beautifully light, and taste very fresh with no hint of "off" milk.

You can freeze whole milk and single cream. We freeze whole milk never had any lumpy issues (unless we forget to take it out of the freezer and dunk it under hot water to defreeze!) obvs. You can't freeze it in glass bottles, but cartons or plastic is fine.

Home made yoghurt is lovely, especially in an earthenware pot.
