To ask for your tasty, quick vegan lunch fixes?

One thing I'd like to improve in 2019 is my consumption of plant based foods, so I'm aiming to eat about 70% vegan food (breakfast, lunch, snacks) with half an eye to becoming 100% vegan in the future (if I can convince the husband to a) eat vegan too or b) prepare his own meaty meals).

What are your vegan staples?

No advice but Like you I have decided to do similar. I’ve been looking at the Deliciously Ella website / Instagram for ideas. I’ve also signed up to Veganuary and they have recipes on there.

My go to easy vegan lunch is a tortilla wrap with falafel, baby spinach, hummus and sweet chilli sauce. So good. Can have the falafel hot or cold! Filling too!

At work we only have boiling water to heat food up, so I tend to take, wheat noodles, a stock cube, sliced mushrooms, spinach, spring onions and whatever other veg I have that will cook in a couple of minutes sitting in hot water.

Or bread and jam.

There are lots of great vegan lunch idea videos on YouTube. Good luck with it, I've tried a couple of times to go 100% now and done up 6 months max. It's frustrating as I always feel so much better in every way on it, but I usually fall off the wagon by being disorganised and having to quickly grab something non-plant based and then being the all or nothing person I am, I'm off the wagon for 6 months. So your 70% idea sounds great.

Soup made in batches and frozen, falafels, salads made with stuff like beans, quinoa and cous cous, leftovers from previous night, hummus, pitta and carrot sticks.

Homous and salad pittas are an easy ‘instant’ option. If you have access to a microwave, make a big pot of soup on Sunday and it will last you until at least Wednesday.

These fritters are really nice, just replace the egg with aqua faba (the water out of a tin of chickpeas. 3tbl = 1 egg)

Mashed avocado mixed with sun dried tomato ( the ones that come chopped up in olive oil) on toast.

Briefly toast a handful of cashews, cumin seeds and sesame seeds then remove from pan. Add 4 tomatoes in quarters and 2 peeled cloves of garlic. Once the tomatoes have softened, tip everything into a blender and add salt. You have a delicious sauce in the time it's taken to boil the pasta.

Soak half a cup of cashews then blend them with a splash of white wine vinegar, Dijon mustard, salt, pepper and a load of fresh basil it's a great dressing for potato salad with red pepper/apple/radishes/whatever

The Bosh website and recipe book has good quick recipes, I'd second PP's recommendations of Deliciously Ella (bit addicted to her miso mushroom noodles)

Dd is vegetarian and I really do forget when making meals, esp lunch. So my last minute is avocado, chilli and lemon or lime juice on toast (sourdough).

Tortilla wrap with vegan mayonnaise (follow your heart veganaise is lovely), smoked tofu and whatever salad you’ve got.

Microwave sweet potato with natural (sugar free not Alpro) soya yoghurt, pomegranate seeds and walnuts.

I’m quite partial to a vegan smoked ham and cheese sandwich these days, with some hummus and veg on the side.

Beans on toast/jacket potato and beans!

I’m not vegan but I do eat a lot of vegan food. I can never really be arsed with lunch so I make in advance. Soup will last a few days and also a lentil loaf with salad the other days.

I'm not vegan but made a few vegan dishes for a buffet recently. This was absolutely lovely on toast, crusty bread or crackers. itdoesnttastelikechicken.com/vegan-mushroom-walnut-pate/

I can't remember whether I added any rosemary or not. It's extremely easy and quick to make if you have a food processor or similar and keeps very well in the fridge for a few days. Also freezes well.

Make this for an evening meal and ensure there are leftovers for lunch. I made this for the buffet too and it was one of the nicest things I've ever made, and also pretty easy. Just make sure you get vegan puff pastry (Jus-rol is good although it uses palm oil). Possibly best in the summer/early autumn when you can get interesting tomatoes (I used a box of Isle of Wight heritage tomatoes from Waitrose which were all different colours and shapes) but I bet it would be good with any kind of good tomatoes. www.theguardian.com/lifeandstyle/2018/jun/09/meera-sodha-recipe-tomato-pistachio-saffron-tart-vegan

Hummus and pitta or crackers, with maybe a few sticks of carrot/peppers/celery/cucumber. You can use other beans/pulses to make a hummus like dip for a change. I used dried broad beans recently and it was good. Baba ganoush is another wonderful dip (aubergines and tahini).

Marmite sandwich/toast.

Peanut butter sandwich/toast.

Beans on toast.

Bean salad and bread, or mix in some leftover cooked pasta or rice to the salad.

I was going to try making vegan cheese out of nuts for my buffet but didn't get round to it in the end. It sounds very easy. Would be interested to know how it compares to cheese made from dairy.

One of my favourites is half a toasted bagel with cheese melted on top, and then baked beans on top of that. Using all vegan stuff of course, some of the vegan cheese can actually be quite nice

I work from home so usually eat leftovers from dinner the night before so generally a veg and pulse stew of some sort.

I also have soup, violife cream cheese sandwiches or falafel and hoummous wraps.

TBH when I take lunch to work I usually take leftovers from whatever we had the night before, & microwave. Pasta, curry, etc - just put a portion in a box when dishing up.

If you want hot food and don't have facilities for reheating, it's worth getting a food Thermos flask.
