To ask for your tasty, quick vegan lunch fixes?

One thing I'd like to improve in 2019 is my consumption of plant based foods, so I'm aiming to eat about 70% vegan food (breakfast, lunch, snacks) with half an eye to becoming 100% vegan in the future (if I can convince the husband to a) eat vegan too or b) prepare his own meaty meals).

What are your vegan staples?

Love all the ideas here. I’m quite boring so it’s either dinner leftovers (curries/ pasta/ stir frys/ whatever) or a baked potato with beans. When I get my arse in gear, I do like roasting a load of veg and drizzling with a garlic citrus tahini dressing and shovelling that into my mouth with pita bread- gorgeous!

My easy favourite. Fry some mushrooms until crispy, add some cooked spaghetti and oatly or alpro cream, chives and nutritional yeast.

Roast cherry tomatoes and garlic and pine nuts together with olive oil, then toss with pasta

Roast butternut squash with sage, toss with pasta (and a bit of silken tofu if you want)

Broccoli tofu cucumber noodles with peanut sauce

Hot miso broth with tofu cubes, spring onions, sesame oil and instant noodles

Fried tofu puffs tossed with peppers and sweet and sour sauce

Sorry it's a pic rather than text - but I bet this recipe for cold Sichuan noodles would work well as packed lunch, and super quick to make.

Olive and sun dried tomato tapenade on toast (make sure it's not got anchovies in though as some tapenade do). Top with avocado if you like. Or make into a sandwich with grilled courgette/aubergine/red peppers.

Being lazy I often pick my lunch up in the Co-op near to my office.

They do

Pasta salad with butternut squash, pomegranate and Garuda dressing

A salad which has couscous, cauliflower, green leaves and smoked almonds

A Christmas sandwich which is something like bubble and squeak and chutney

The obligatory falafel wrap

All available as a meal deal including drink and a snack such as fruit pot or hummus and mini pita bread .

Can I also suggest looking on the vegan board as there was a thread there on vegan lunches in the last couple of weeks

Extremely easy lunch from my American childhood - peanut butter and jelly (jam) sandwich (I use almond butter nowadays). Tastes really good. Also peanut butter and banana.
