To ask for a knife recommendation?

I want s new knife for me and me alone. Cooking not anything sinister. It can’t be too big but not do I want a small paring knife. My favourite knife is one I got free with Good Food magazine - grey handled by A brand I can’t remember but it’s kind of a middle size and I love it. But it’s dying. I don’t want a cleaver or a huge one but I need something sharp, yet not heavy and easy to handle. Help!

I’ve got the perfect knife for you. It’s a sebatier trompette. It’s brilliant! My dh bought it from Robert Dyas and I honestly find any excuse to chop! I’m sure the novelty will wear off but for now.....where’s that carrot?

Sabatier knives are the best, you can often find them heavily reduced in TK Maxx.

Big fan of global knives, they’re pricy but totally worth it. I’ve got 4/5 different ones all different sizes.

Another vote for a sabatier. We have a set and the medium size cooks knife is the one we all use most

Another vote for Global here. They're expensive but I often see them half price on either Brandalley or Secret Sales. They've revolutionised my chopping!

I tooove sabatier but can I strongly recommend ceramic? Sabatier do them too! They are rubbish for chopping up things like sweet potato or butternut squash but absolutely amazing for everything else and they NEVER get blunt

I have Type 301 Chroma knives. They do a fantastic small chef’s knife.

Sabatier is a class of knife IIRC. Stellar Sabatier are very good, full tang, forged, substantial without being clunky. The Stellar Sabatier chef's knife is excellent and the smaller paring knives are very good too. Their santoku is a real beast if you do a lot of chopping.

Knives come in all shapes and sizes.

I guess a 16cm kitchen knife is the most versatile. As for make, depends what you want to spend. However what ever you spend get a decent sharpener. Ive got spoons that are sharper than friends and families top end knives!

A good knife lasts decades. We have some Wusthofs that are 20 years old and still factory sharp.

I bought a Sabitier Trompette paring knife the other day and like a previous poster have been looking for things to chop! It was only £6. I'm looking to buy the next size up too!

Oh are the Sabatiers in TK Max any good then? We are looking for new knives and went in there and I saw the Sabatiers but they were so much less than I expected I thought there might be a catch

We just got new knives from John Lewis. They are Damascus steel so look beautiful but are also scary sharp and great to use. The littler ones were pretty reasonably priced too.

Beware Sabatier, the name has been sold to many other companies and the cheap Sabatiers reflect this.

For the smaller jobs, peeling and so on I like the good old Kitchen Devils.

If you're looking to pay a lot consider how you will sharpen it down the line.

I like Wusthof and Zwilling Henckels. I've had kitchen knives by these brands for 20 years and they're still as good as new. I can't say the same about Global, and most definitely not Sabatier.

Wusthof especially does amazing bread knives.

DH bought a set of 20 back in the summer. They're amazing, well balanced, and stunning too.

Wusthof are great. I also love my Robert Welch middle size knife (it is about 16cm, I guess - came as part of a set so not sure). It's really well balanced.
