Vegetarian help please!!

Have been a pescatarian for this past 6 months but have decided to fuck fish off all together now and just become veggie. I’m in need of some help with recipes. They also need to be dairy free.
We work long hours so needs to be either slow cooker friendly, or quick and easy! We hate stew.

Just to be mega awkward.
Please help as I’m going food shopping in an hour(ish).

Egg fried rice with tofu.
Chickpea, squash and spinach curry.
Lentil bolognese.
Felafel with salad and pita.
Frittata.
Handful of cashews on stir fry veg and noodles.
Veggie sausage and mash (frozen is awesomely quick) with peas.

Use quorn pieces and chickpeas instead of chicken. And leave out our replace chicken stock.

What about veggie lasagne? Make ahead and put in the oven when you get home.

Mexican quinoa - chop a load of courgette, pepper, onion + tins of black beans, sweet corn, Mexican spice mix, quinoa and stock. Simmer 20mins.

Baked potatoes with beans.

Quesadillas with taco beans (although not as good without cheese)

Wraps and salad with vegan quorn fillets.

Curries and chillies are your friends. Ideal for slow cookers and naturally dairy-free in most cases, so you don’t need to worry about substitutes.

Also a great variation on a standard curry that people don’t always consider is Caribbean curry. Delicious and you can (in fact should) make it with coconut milk.

What brand is that? Having trouble finding vegan cheese I like.

I eat loads of chilli made with various beans, curry with chick peas or sweet potato/butternut squash, pasta with roasted veg and spicy tomato sauce, tofu stir fry...

Have a look at some of the Bosh recipes. They’re all vegan so would fit your requirements.

It’s an Asda one purple. It’s dairy, gluten, soya and something else free. It’s made from coconut I think but tastes really good!

Sweet corn fritters with eggs and avocado (just replace the milk in the fritters with a dairy free alternative or water)

Panko crumbed deep fried aubergine with katsu sauce and sticky rice

Mushroom and lentil bolognese

Sweet potato and black bean fajitas

White bean and sweet potato burgers

Marking my place for new ideas.
We eat veggie but dairy/egg free and don't eat quorn either really, occasionally soy mince or sausages but mainly I use Tofu if I want that bit extra!

Bean chilli is great, I know it can be made in the slow cooker but I've not tried it.
Tofu fried "egg" rice, exceedingly vegan does a recipe that's nice and quite quick, I use microwave long grain rice instead of cooking some up. Normal egg fried rice too obviously.

Pie is awesome, again can be done in the slow cooker though not tried it myself. American style creamy vegetable pot pies (using oatly barista to replace milk is brilliant), cottage pie using lentils or soy, the BBC good food site has a good lentil recipe, I think it's meant to be for kids but I put it in one big pan and it works nicely.

Curries are very slow cooker friendly! Lots and lots of curry!

Spanish omelette. Any kind of curry. Use a curry paste to make it easier. Use chickpeas and veg instead of meat. If the recipient calls for cream use coconut cream. A good mix is cauliflower potatoes peas and ground almonds for a korma. Veggie bolo naive. If you don't like quern mince then use mushrooms celery onions peppers courgettes. Cut them into really tiny pieces so you can't identify what each piece is. Veg stir fry with tofu. You can get bags of stir fry veg for a super quick dinner. Not ideal nutrionally but still better than no fresh veg.

Last night we had this. Fed family of four, with left overs

Taco Soup
2xtins of kidney beans
2xtins of chopped tomatoes
2xtins of white beans (wash sauce of baked beans)
1xtin (large) sweetcorn
1xonion large
1xpacket of taco seasoning
1xpacket of BBQ fajihtia mix
1xpacket of tortilla corn chips
Crème fraiche (dairy free) and jalapeño peppers to serve.

Chop and fry the large onion until soft and golden. Then empty all the tins into the pot. Add packets of taco and fajitia seasoning and cook through for 15 to 20 minutes. To serve, scatter tortilla chip in the bottom of the bowl. Ladle the soup over it. A dollop of crème fraiche and a few jalapeño peppers, plus extra tortilla chips on the top. Easy, filling looks impressive. Kids love it too.

As a replacement for tinned tuna I've been using mashed chickpeas. It's obviously not identical but you can add a bit of nori or Himalayan salt for a fishy taste.
I heat the chickpeas and mash them in a pan to dry them out a bit but you can use it raw if you're in a rush.
I add mayo and Sriracha sauce and it's good in quesadillas and toasties and baked potatoes.

Jackfruit is lovely. It's good in tacos.

With tofu my family prefers it caramelised. Tofooo is the best one but it works with the cauldron one too.
Pat it dry with kitchen towel so it's not soggy.
Then fry in a little oil then cook in some mix of sugar and soy sauce type thing.
The cauldron foods website has a ginger recipe that I adapted.
Or if you Google there's one for sushi that makes caramelized tofu pieces you can use in all sorts of ways.

I run into Sainsburys straight to the fridge veggie section and buy a few things then run away before I see the patisserie section.
They have tofoo and jackfruit
